第一次寫食評,全因依間餐廳真係值得支持下。食過兩次,食物由刺身至各款熟食都非常出色,唔好睇價錢好似有點貴,性價比其實算高。環境算舒適,喺沙田想食下 decent 日本野嘅話值得一試。

帝都酒店內有間很棒的日本料理「YAMA」,主打吃傳統與摩登元素的和式料理,菜單品項豐富,味道也出乎意料地好。時令季節刺身 (HKD時令價) 這盤太漂亮,真是光看就很滿足,每款刺身都非常新鮮,魚生具有清爽清甜味道,口感富彈性。我還蠻喜歡這道炸牛蒡揚出豆腐 (HKD108) 前菜,炸過的牛蒡甘香可口,鰹魚醬油中和了揚出豆腐的油膩感,豆腐口感綿密有濃厚豆香。海之卷 (HKD258) 是必吃之選,以大蟹肉及牛油果作餡料,米飯外層帶香脆感,上層置有魚子醬,讓口感超有層次,好滋味。另外試了牛舌 (HKD98)、牛肋肉串 (HKD68)、雞胸軟骨(HKD48)、紫蘇豚肉卷 (HKD48) 及芝士 (HKD48) 這幾款燒物。當中牛舌和雞胸軟骨這兩款都相當出色,牛舌柔軟又爽滑,一點也不韌。而雞胸和軟骨的比例恰到好處,搭在一起有爽脆多汁的口感和嚼勁,配檸檬享用,實在停不了口。牛肉朴葉味噌燒 (HKD258) 這一道料理吃起來很像是濃稠的味增味,味道比較重,具鄉土風味,適合佐以白飯吃,推薦喜歡日式料理的朋友去試看看!- 野菜伴蟹味噌鍋 (HKD158)- 汁燒吞拿魚下顎 (HKD208)- 焦糖燒菠蘿及紅

繼續來到是串燒環節,我們選了串燒雞胸軟骨、芝士及紫蘇豚肉卷各$48/串,雞軟骨吃過不少但雞胸軟骨好像是首次品嚐,如我所料口感絕對沒法輸,再以小許鹽花調味用來佐酒一流,至於燒芝士外層焦香內裡奶香滿滿,芝士迷必定要點來品嚐啊。

而這天的時令季節燒海鮮我們得到了喜知次,那一柳如詩如畫的稻穗令此菜生色不少!不止美麗稻穗內的米粒已弄成像爆谷般的香口脆米挺可口的,喜知次魚油豐膄吃下口感焦香中帶出潤澤感,像西京燒的做法味道略帶香甜很惹味。

有一陣子無去帝都酒店,原來新開左呢間食半自助餐的yama。平日lunch 388 一位, 包自助前菜燒物甜品壽司天婦羅,種類都不少,壽司唔係多款但都好新鮮,每次都係得幾件,拎左師傅再整番補上。推薦魚蓉壽司,甜蝦壽司。天婦羅吉列豬魚都好好食又夠熱,燒物有牛舌雞串菇類,仲有幾款鹽同檸檬配搭。甜品大福都好食,唔會太甜,仲有兩款水果(蜜瓜好甜)主菜要左加錢的龍蝦,新鮮彈牙,係個日式醬多左d,搶左海鮮味。可惜太飽,試唔到冷烏冬同冷盤。整體而言,性價比都幾高,座位亦寬落,服務態度幾好。
