前幾年生日去過【Maison ES】慶祝,覺得氣氛、食物同環境幾好,今年生日再同fd去呢到慶祝。可能之前有幾部出名既電視電影黎拍攝,所以就算平日都多左好多客人。之前係主打fine dining,而最近新出左個4 courses dinner set,比較親民。Sea Cucumber Meat:桂花蚌、三文魚籽、豌豆、薯仔分子泡沫、青檸泡沫、XO醬。桂花蚌非常鮮甜、三文魚籽鹹香、薯仔分子泡沫非常特別、creamy但好輕盈,青檸泡沫同XO醬帶出個鮮味。The Tartare:鹿兒島和牛他他、肩胛裏脊、魚子醬、鵪鶉蛋、港式沙爹泡沫、亞麻籽脆片。和牛他他肉質鮮嫩、加左蛋黃醬同港式沙爹泡沫非常惹味,加上魚子醬同鵪鶉蛋多左其他味道、而亞麻籽脆片增加口感。French Yellow Chicken:法式黃油鷄卷、炸豆腐乾、秋葵、意大利麵脆皮、泰北咖喱。法式黃油鷄卷外皮香脆、肉質嫩滑、泰北咖喱非常惹味。Pork Belly:西班牙豬五花、紐西蘭鰲蝦、喇叭菌、青蘋果泥、芥末汁。全部搭配都非常特別,西班牙豬五花肉質軟霖搭配青蘋果泥香甜。紐西蘭鰲蝦肉質彈牙鮮甜。時日甜點:Bread Pudding,外脆内軟、好香奶油味,搭配雲尼拿雪糕,非常濃郁。時令水果:包括西瓜、哈密瓜同菠蘿、average水平無咩特別,建議叫甜品。Saint Louis Blanc de Blancs Brut:套餐包一人一杯sparkling wine。餐前麵包:非常新鮮好食、一D都唔馬虎。 continue reading

裝修環境歐陸古典,好雅致。Tasting Menu $1300 per head。🤔自家製蔥油麵包,XO 醬牛油賣相好吸引。外皮脆脆地,但係又冇期待中好香嘅蔥油味。有個XO醬 butter cream,但係同成件事唔係好夾。個人麻麻哋個XO醬,覺得如果比牛油或者蔥油味牛油會更香。🤔L’amuse Bouche阿拉斯加蟹肉伴以wasabi的開胃菜,冇咩特別。👌🏼Scallop 靈感來自於酸菜魚。湯底係酸菜魚湯,杰杰地,味道唔錯,如果湯嘅份量再多啲會更好。至於帶子就好薄,唔特別覺得鮮甜,冇咩味。面頭裝飾嘅薯仔脆脆主要係for 賣相,冇特別增加味道方or層次。 👌🏼French Yellow Chicken 雞肉都OK嫩滑,但係較淡味。個汁有少少花雕酒味。整體嚟講花咗啲心思,但係又未算好驚喜出色。👌🏼Lobster Ravioli 龍蝦汁味道濃郁,雲吞就普通豬肉雲吞味。 👌🏼Tartare和牛他他就咁食酸酸甜甜冇咩特別,但係撈埋魚子醬同鵪鶉蛋就口感嫩滑,層次更上一層樓。好味。👌🏼The Wagyu和牛質感唔算特別嫩滑油香,比較有咬口。有一pat 沙茶醬俾你點下,有啲新鮮感但係又唔多夾。👌🏼Lotus Mont Blanc普洱雪糕正常味道。最後送上好甜嘅Macaron 作為尾聲。整體嚟講,餐廳係有啲誠意整中法fusion菜。整出嚟嘅菜式聽落都有新意。但係出到嚟嘅效果就OK正常,未算係好難忘好出色。環境:★★★★★ 食物: ★★★☆☆ 推介度: ★★★☆☆ continue reading
