But when you take a closer look at the door plate , the word “udon and coffee” was crafted on the left bottom corner
Damn lab specialises in handmade noodles in Japanese dashi stock , together with the owners’ addiction to coffee , they created such pairing of udon and coffee to highlight the umami in food .
Visitors can first enjoy a concept tour guided by the owner, follow by the selection of your favourite flavour of noodle and coffee, various desserts are available as well.
I picked the seasonal edition monkfish liver miso flavour. Don’t be mistaken by the name , the overall texture and flavours are actually lighter than any usual ramen you can find in hk, the slow cook chicken breast is extremely sauve and tender that I would revisit just because of them.
I’m no expert In terms of coffee, the owner recommended the BRAZIL FAZENDA BAIOKA which is full of Cherry / Grape / Yellow Plum / Chocolote, it’s subtle yet well balanced in every ways , nothing too strong to overpower the udon but good enough to unleash your appetite for more desserts!
For the desserts, I got greedy and picked both the caramel pudding and basque cheesecake in white matcha, am not gonna reveal the flavours here. They are simply beyond words that you just have to discover them on your own!
