Fish & Meat is a venture of my favourite Maximal Concepts, who also owns Mexican hot baby Brickhouse, premium steakhouse Blue Butcher and wicked Stockton. Unlike the other cuisine based restaurants, Fish & Meat is about getting back to the basics, using the freshest ingredients to deliver simple and rustic dishes to the table. With head chef Russell Doctrove's fruitful past experience from working in Amber and St Betty in Hong Kong, Restaurant Gordon Ramsay in UK and The Waterside Inn in Bray, the dishes here are pretty much guaranteed to be simple yet packed with flavours.

Located at 32 Wyndam mansion, this 3,500 sq ft restaurant is spacious and all the way rustic and metal with white washed exposed brick walls, raw wooden tables and brass lightbulbs making the restaurant like a cottage eatery. The outdoor terrace overlooking Wyndam and D'Aguilar Street, was beautiful and make Fish & Meat 'the' place to go for brunch on a lazy Sunday.

To start, I had a Homemade Sicilian Lemonade - HKD80 mixed with blueberry jam and thyme to quench my thirst. It was a fruity and herby drink. I did not like it too much as I expected a stronger citrus note.

After a refreshing sip, I went on to explore the buffet station. The Bruschetta Station was very attractive, displaying trays of Mozarella, roasted red peppers and chovies, sun-dried tomato, spinach dip, artichoke dip and grilled mushroom.

Then I went on to check out the Salad Station with five great salad choices. The curried fennel and watercress salad with yogurt looks appetising, the devon crab salad looks summery, the Cedar River Prime Sirloin Salad looks divine, the famed homecured beetroot gravlax was the heaviest option and of course there will be the classic Caesar Salad but in Fish & Meat style.

My first plate held Mozzarella, roasted red peppers, sun dried tomatoes, Black Label Galloni prosciutto with compressed melon, curried fennel and watercress salad.

The mozzarella and sun dried tomato pairing was not a good idea as both of them were rather dry in texture. The Roasted Red Peppers helped moist up the palate with its sweet juice. The Black Label Gallni Prosciutto was great but the paired compressed melon was dry and flavourless. The Curied Funnel and Watercress Salad was rather wet and ended with a harsh bitterness which the sweet mango could not balance out.

I did not catch the name or origin, but this tiny Oyster was a very easy tasting oyster with ample sweetness. My friend easily had over 10 of them.

Next I headed to the Buttermilk Pancake Station and got some of their signature pancakes. They have loads of condiments at the station including strawberries, raspberries, blueberries, dried grapes, granola, bacon, icing sugar, clotted cream and syrup.

My first pancake was made a tad wet, so I asked the server to cook the next one well done and it came out perfectly. The pancake was very buttery, very light and had a melt in your mouth texture. Everyone else on my table hated it but I actually like it a lot. This is a texture that I cannot make and I want the recipe!

My main was Brioche with Mushroom Ragout, Organic Poached Egg, Truffle & Parmesan. The mushroom sauce was rich and creamy with intense mushroom flavour. The oozing sweet yolk on too of the soft buttery brioche was lovely, but the dish could be made better if the brioche is toasted.

The Hand-ground Veal and Pork Meatballs was served with pesto marinated tomatoes, mozzarella and arugula was an interesting main as the meatball carried a special meaty flavour that I love.

I also tried a bit of the Pan Fried Sea Beam, served with cherry tomatoes, fennel and green pea puree (with a supplement of HKD70). The sea beam was enticing! The flesh was succulent and sweet with extremely crispy skin. This was my favourite among the mains!

Finally comes the dessert, the Silician Lemon tart with Tahitian Vanilla cream was excellent with a good balance before tartineas and sweetness.

The Chocolate Pot was nice too, it tasted like a Ferrero Rocher break down. This however was very rich and intense in flavour that I could only take a spoon of it.

The new Fish & Meat Sunday brunch is available every Sunday from 12-3pm, priced at HKD390+10%. You can top up to a freeflow brunch at additional HKD290! The brunch is very family welcome and offers complimentary brunch for kids under the age of 11.

The brunch is truly a good deal with a good variety of buffet items and main choices. The buttermilk pancake station is in my opinion to die for. A diner next to our table had 13 pancakes totally proved how good the pancakes are! I left Fish & Meat with a contented stomach, and all I wanted next was a good afternoon nap!

說回桌上餐牌,分類著small, large, sides, sweet我們三個人,於是每人點一個main course (餐牌上寫是large),再加兩個appetizer. (即餐牌上的small) 。既然是fish and meat,當然要點這兩款為主餐:pan fried sea bream 及 veal and pork meatball,再加一道carbo: artichoke risotto with truffle。前菜是 yellowfin tuna with compressed watermelon 以及 tiger prawn。 

先來的是色調有如紅寶石般鮮豔的黃鰭吞拿魚泥合西瓜,西瓜和吞拿也切細方粒,單是賣相已拿滿分,以簡單的豉油及羅勒醋汁,再有淡淡的紫洋蔥,我敢說這是我印象最深最好的一道頭盤。

炭燒虎蝦端上時已去殻,以香濃的rocket 火箭菜舖底,又是一道色香味的開胃菜。

我愛吃肉,點了以牛仔肉混豬肉的meatball,肉丸混著香濃的肉味,肉丸的製法應該加入了麵包糠,吃了一粒已覺飽肚,而且最欣賞的夾了一片水牛芝士及蕃茄,令這道菜充滿意式風情。

接著是煎魚,最驚喜的是白豆masala,香料令整頓魚的風味增添異國風味,很讚!

Risotto 加入super food artichoke ,口感跟傳統意大利飯有所不同的,是這飯很綿很creamy,點睛的是加入了黑松露,大大增添了精緻感,味道很好,但因吃了肉丸,這個只吃了數匙,還好我們三個人可以將食物都吃光。

飯後來杯齋啡,是我的指定動作。因為環境都很hip 很lifestyle ,當我見到端來的regular coffee以在小托盤上,咖啡以小玻璃杯盛載並以皮革盤墊,另一端是牛奶一瓶,已被這巧妙用心的擺設拿去我的心,一間餐廳最重要的是味道,但賣相也少不了,fish and meat 讓我看得出他們的用心。

得知餐廳星期日serve brunch,下次來就要吃這個!

A bit of chic grunginess crossover modern easy comfort, I think that's the gist. The photo is probably more effective in giving you the idea. I'd give decor and ambience a 7.5/10.

Onto the fooooood - for what does one live for, if not for the climax brought about by the explosion of flavours, texture and visual satiation? (Forgive me it's Friday)

I was told by someone who was told (soo much double hearsay), this is their signature dish. Hmm...I would not say this is amazing, but it's pretty good honestly. Bluntly put the dish comprises of three lumps of crab mixture with some avocado, celery and salad around it. Let's try a more romantic take - Fresh crab meat batter, a polygamous marriage of sweet and juicy celery goodness, subtly crunchy elements (apple??) and Devon crab, decorated and complemented by fresh salad, buttery but not over-ripe avocado slices and caramelized biscuits. My one comment is that the consistency of this dish is slightly too wet, even for a salad. Rated 7.8/10

Free range warm French chicken salad/pancetta/arugula/cherry tomato/basil

First, this is bang for the buck. Generous portions and good proportion of all salad materials. Honestly I don't know how French chicken is different from any other chicken, do they eat buttered cornmeal or baguettes for breakfast? What is wonderfully executed in this salad dish is the preparation of the chicken (fillets I think), the marination and cooking of the chicken is just sublime. Croutons must have been fried in butter, methinks. Don't have much to add here except they didn't serve cherry tomatoes as advertised. YUM ANYWAY. Rated 8.5/10.

I'm not a fries person, and the fact that fries took up half the dish makes me feel violated *sniffs*. That being said, hats off to the chef for turning this anti-fries person! Long and thin, these fries are perfectly executed and has none of the unpleasant greasy, starchy and bland qualities of your usual fries. I was told again they might have used chicken salt (wait is that 雞粉??), and on taste, no ketchup is needed. Enough on the fries. 

The beef tartare was ok, good but not otherworldly good. I have a vague memory of chewing on some cartilage ...overall rated 7.8/10.

Whipped mascarpone “cheesecake” / raspberry / shortbread crumble

Of all the things I was told, I was NOT told this is deconstructed cheesecake! Hence it came as a surprise that it did not come in the moulded form of a flat triangular prism. It came as a BLOB of CREAM with crumble on top and sorbet at the side. (I have such a gift of being blunt don't I?) So when it came to tasting this overly-rustic looking dessert, I was blown away by the lightness and exquisite balance of each mouthful. I just had to ignore that voice inside my head screaming how much fat and calories I am feeding myself...Could perhaps consider adding some fresh berries on the side though. Brilliant comfort food on a Friday. Rated 8.2/10.

Good coffee to end the experience! Aromatic and well-balanced coffee, fruity and not too sour.

That's it! Would love to come back to try their steak, I'd imagine it'd be slowcooked and tender...will have to supplement this review later

除了已預先拌勻的沙律外,還有些風乾火腿拌蜜瓜片、水牛奶芝士、多款香草醬及多士,自行製作一件占苗多士也不錯,而且咸香的火腿與甜美的蜜瓜片真是完美的配搭,互相襯托出美味來,加多件水牛奶芝士,再下點Basil醬,真是美味。

可能大家覺得只吃沙律作頭盤會有點單調,當然不會只有沙律,還有新鮮的海鮮供應,有凍大蝦、蜆、青口及生蠔等等,款款鮮甜肥美,而且更是無限量供應,添置速度又快,常常都是一大盤的。

另外,還有一些甜點,如新鮮乳酪及即煎克戟等等,最喜歡的一刻就是發揮創意的時候,可在香噴噴又鬆軟的克戟上放上配料,擺放得靚靚時,吃得又開心,配料款式都不少,有煙肉、芒果、士多啤梨、藍莓及紅桑子,醬料亦有焦糖漿、楓糖、忌廉及糖霜。原來煙肉配焦糖漿是十分好吃的,果然越離奇的組合,越能產生意想不到的美味。

此時,早前所點的主菜陸續送到,我們一行幾人各自點選不同的來作分享。主菜欄內共有七款可選,當中有些需要額外收費的。我的超豐富主菜是【Prime Rib of Beef】,另需$140元,可是真的物有所值,一塊的體積已大過我的臉子,更何況有兩大塊呢?燒得相當不錯,邊位微焦帶炭香,肉質嫩滑軟滑呈粉紅,配合打得軟滑的薯蓉,真是重量級呀。

友人所點的是需另加最貴的【Diavola Style French Baby Chicken】,由法國入口的春雞肉質鮮嫩柔軟,而且雞味香甜濃郁又juicy,是很好吃,可是價錢是需另加$230,的確有點兒貴。

最後,少不了甜品,雖然不是任吃,但每人一份的量也不算少,幾個人可以點上不同款式的甜品,互相分享。我最喜愛的是【Sicilian Lemon Tart】,酸度很高,檸檬撻不夠酸,就像沒有了靈魂一樣,所以真的很好吃。另外,【Air-Misu】是這兒的招牌甜品之一,極像將一杯Tiramisu分拆開來,mascapone cheese打得輕盈,入口很泡泡模樣,配合咖啡味Gelato,只有兩個字可形容 - 美味。

感覺上,這間的Brunch較為健康,以沙律為主,而且主菜方面的份量十足,與友人一同分享也滿足,如愛吃生蠔的朋友也不能錯過的。

I didn't want to go with the lamb main and asked to sub from the a la carte menu for a fish item and out of 10 items, there was only 1 other fish option that did not have a price difference. Their starter menu also had many items that were unavailable which disappointing. The waiter and even the managerhad the nerve to come up and tell us that "sundays are busy, that's why many items are unavailable". Unacceptable. Why participate in Amex Restaurant Week if you're not going to offer what is on your fancy Restaurant set menu? It's not the customer's problem that you don't have enough ingredients because your sundays are "busy". The dissatisfaction was handled poorly from Fish and Meat's end and this was very surprising because we were under the impression that a restaurant from the Maximal Concepts brand would provide a flawless customer experience. I felt if they could not offer items on their Restaurant week menu, they should have allowed for more choices to sub from their a la carte without charging extra. After all, we made reservations 2 weeks in advance only to be disappointed with an experience filled with "have nots". 

The Food

I went with the french monkfish from their a la carte menu to replace their missing fish item on their set menu. I could barely taste anything and the fish was slightly overcooked.

For the starter, I chose the steak tartare which was good. 

For dessert, I chose the key lime tart which I felt was way too sour for my tastes. 

I'm not compelled to come back here. Not impressed, Maximal Concepts!!

下午1點,中環的lunch peak hour,來到這裡竟然不用等位。侍者安排了坐在梳化位,可以看到廚師準備菜式。甫坐下,看著餐牌,今天想吃得簡單一點,便選了一道魚。香煎鯛魚配茴香、豆蓉和車厘茄。表面放著的一小块洋薊,鯛魚的皮煎得香脆,下層像層層疊的把茴香、車厘茄放了在豆蓉上,少許海鹽提味已十分足夠。聽說這裡的甜品不錯,也叫了兩客色彩豐富的甜品。這款慕絲很香滑,桃和紅桑子的少許酸度減輕了甜度。慕絲在口裡溶化,和朱古力外層相映成趣。檸檬批,我的最愛。 檸檬的香味切下去的那刻,一湧而上,酸勁十足,起了醒胃的作用。

聽說這裡的甜品不錯,也叫了兩客色彩豐富的甜品。這款慕絲很香滑,桃和紅桑子的少許酸度減輕了甜度。慕絲在口裡溶化,和朱古力外層相映成趣。

餐廳每逢周日都會供應BRUNCH, 每位HK$390, 任吃生蠔, 亦有不少沙律和頭盤. 而主菜就每人一份, 其實都相當豐富的.
先來看看取餐區有什麼好吃吧. 沙律有幾個不同的款式, 有蟹肉沙律, 煙三文魚凱撒沙律, 亦有沙朗牛沙律. 大大盤擺放著, 雖說外藉人仕胃口大, 但這裡RE-FILL速度夠快, 完全不怕拿不到食物. 而前菜方面都有好幾種包括烤蘆筍, 燒紅椒, 當然亦有意大利煙火腿, 烤南瓜等等. 其實款式不算好多, 不過每樣配搭都幾特別, 絕不是''行''貨.

而海鮮最回本的當然是這裡任吃蠔了! 來自法國貨色, 細細隻不過蠔味幾濃, 也夠鮮甜. 也有不少青口和凍蝦等, 質素幾新鮮. 喜歡海鮮的如果吃上一打蠔其實巳可以回上大半的本了!

BRUNCH本身不包飲品, 但如果想邊吃邊喝點有特色的飲料, 加個數十元就可以有一杯. 宅女點了這個自家製的檸檬配藍莓及百里香, 一杯加HK$80, 但上來份量都幾巨大, 入口都幾清, 甜度不高, 夏天喝很對味. 如果想無限添飲就只需加HK$180. 當然除了這款沒酒精的飲品, 餐廳亦提供幾款含酒精飲品, 無限添的也只是加二百多元. 星期天嘛, 就享受一次吧.

這個雖然任吃, 但也常常被搶一空, 幸好RE-FILL速度夠快, 宅女也能吃了半打. 生蠔體型不算大, 不過隻隻都幾肥美, 入口蠔味濃郁, 海水味適中, 算是較討好的一款. 而凍蝦都幾大隻啖啖肉, 肉質帶點彈性, 青口亦夠新鮮.

試了煙三文魚沙律, 三文魚塊塊都幾大, 厚度適中, 吃起來帶點煙薰香, 而且亦有點魚油脂不算乾身, 配上底下的沙律菜吃清新得來口感豐厚, 宅女也禁不住番吃了兩次; 另外沙朗牛沙律也是必吃頭盤之一, 牛肉烤至半生程度, 入口仍是非常的軟嫩, 加上混入的炸蒜即時變得十分惹味. 不過宅女自己最喜歡的還是這裡的烤蘆筍, 條條粗莊入口沒有渣, 加了些開心果跟芝士作調味, 吃起來更是油潤可口.
其實吃那些自取的頭盤跟前菜都巳飽了五成. 但每位仍可以自選主菜一款. 款式有七款選擇, 有法國春雞, 香煎鯛魚, 小牛肉混豬肉球, 意大利飯等等, 有些款式不用加錢, 但比如意大利飯或春雞那些食材較高級的就要加由數十至二百多不等. 當然牛魔王亦有ROAST OF THE DAY可以選擇, 來個PRIME RIB就絕對滿足.
宅女一向對雅支竹情有獨鍾, 就算了個雅支竹意大利飯 (另加HK$70)

上來的份量真的有點巨型, 看看混在飯裡的黑松露也是下得很豪邁呢! 上方還放了兩顆烘過的雅支竹, 整個飯簡單得來又幾吸引. 意大利飯質地非常CREAMY, 也帶有很香的黑松露味, 飯粒也煮至剛剛好亦帶點硬度, 吃起來口感煙韌有嚼勁, 味道沒有太重, 但很有份量感. 實在是個令人滿意的意大利飯.

只見上來時鯛魚跟車厘茄層層疊著的擺放得超漂亮, 看看那塊鯛魚表面燒至色澤金黃還帶著少許烤焦. 入口魚皮非常香脆, 但底下的魚肉又極盡軟棉, 連著點點魚油脂令滿口都充滿著濃濃的魚油香. 喜歡時再抹一點青豆做出來的醬, 口感馬上更添清新.

友人無懼吃不完的風險, 點來這個烤牛扒, 上來時牛扒件頭真的十分大, 而且每片都甚有厚度. 只見牛扒烤得帶著粉嫩色澤, 肉質非常軟, 而且連著的肥脂跟瘦肉呈三七比例, 非常適中, 入口實在很香. 不過最令人驚喜的還是墊底的薯蓉打得超軟滑, 味道帶點微咸. 雖然份量真的很多一人未必吃得完, 但水準的確十分不俗.
甜品亦是每人可以點一款. 當中有三個不同的選擇. 宅女還是選了個最穩陣的CHOCOLATE POT.

上來時真的以一個透明小樽盛著, 頂端鋪滿了厚于的忌廉, 中間夾雜了不少果仁顆粒, 而底下就盡是滿滿的朱古力慕絲, 慕絲質地細密多於軟滑, 口感實在, 但朱古力味幾濃, 加點果仁口感頓時更豐富很有咬口. 以朱古力迷來說驚喜度不大, 但水準巳在合格之上了.

感謝店方跟公關之邀令宅女可以過了一個愉快的周日.
感覺這裡的食物水準是不錯的, 而且環境也十分舒適, 周日來這裡嘆一個舒服BRUNCH身心都會馬上輕鬆起來.

再行幾步便是Buttermilk Pancake Station,有專人替大家即場煎製,因太受歡迎,大家要有一點耐性
用Buttermilk製作的Pancake ,實在又鬆軟又香口,接過Pancakes,大家便可按自已喜好為它粉飾一番(我們的,當然是失敗之作=.="),我和小丸子就最愛芒果,再加上雲呢嗱忌廉,最後淋上糖漿,簡簡單單,香甜美味!
也有朋友會放紅莓藍莓,新鮮多汁,又或是煙肉,除了糖漿,還有焦糖漿供應
喜愛吃乳酪的朋友,這裡還有一樽樽Homemade granola / yoghurt / raspberry jam供應,穀片與乳酪,除了清新味美,還來得健康有益喔~

眼看還以為是吞拿魚,原來三文魚都給紅菜頭汁染紅了
一放入口就真相大白,魚油豐富,又帶點紅菜頭的香甜味道
火箭菜來得新鮮爽嫩,配以醒胃醬汁,簡單美味
Cedar River Prime Sirloin Salad
用西冷牛肉來製作沙律,想應是沙律中較重口味的款式吧~
牛肉煙韌,味道富肉香,配以帶點辣的沙律醬,定能滿足大家味蕾

不過,最愛的,還是這一款Devon crab salad
蟹肉的份量慷慨,每口都是蟹肉,質感幼滑,味道鮮甜
配洋蒽會多一份香口感覺,實在太好吃喇!
還有常吃的凱撒沙律等其他款式,不過實在已經無暇應付喇~
沒騙你,試過的早午餐不少,吃得最多沙律的一定是這一回!

頭盤部份隨了精彩沙律,還有Seafood Station,供應生蠔大蝦等海鮮
不過今次給沙律的鋒芒蓋過了,生蠔帶濃郁海水咸香,而大蝦則肉質爽口,味帶鮮甜
除此,還有蜆肉和青口,大家也可試試

飲品方面,餐廳首推Homemade Sicilian lemonade with blueberry jam & thyme,每杯$80,若想借限量添加的話,則加$180,清新好喝,除了檸檬,還有藍莓和百里香,味道層次豐富,而好酒之徒則可選Prosecco 或是Bellini ,也可以單點或是選擇freeflow
而我倆心目中另一推介就是即榨蘋果汁,我們不愛誇張,這杯蘋果汁差不多是我們喝過最好的! 不過早午餐內也會以單點提供,好像沒有freeflow 的

因為沙律的緣故,未來到主菜環節已經覺得有點飽喇

上一次來吃過Pan fried sea bream,實在念念不忘,今次一於再encore
精妙之處,是兩片薄薄的鯛魚柳,看似乾身,其實是外香脆內多汁幼嫩,實在好吃得很! 果然是這裡的招牌之一
配菜中也特別留意墨魚,爽口鮮甜,而櫻桃番茄則味道清新,多汁好吃,大家也不要錯過

比利愛吃雞,首選Diavola' style French baby Chicken
大家也有我們相同的疑問,為什麼此雞比牛扒來得還要貴,一問之下,如來BB雞來自法國有機農場,健康之餘雞味也特別濃郁,加上由這裡絕對可信懶的大廚煮理,雞隻烤得香口入味,雞肉嫩滑無比,就是連雞胸部份也一點也十分嫩滑
質素無庸置疑,不過,加$230值唔值? 視乎大家有多喜愛吃雞喇! 又或者,點一客來分享也未嘗不可

幼滑忌廉下是餅碎果仁等,口感豐富

先來沙拉, 這類的沙拉款式不少, 尤其喜歡吃菜的朋友一定會很開心. 我非常愛吃沙拉, 每款沙拉我都試過了. 最好吃的一定要試他們的Cedar River Prime Sirloin Salad, 感覺有一點泰式, 有菜跟牛肉, 配上微辣的沙拉醬, 蒜泥跟乾蔥的味道很香, 很好吃! 簡單的smoked caesar salad在這裡也做得好

還以為主菜的份量很少, 完全非常大, 其實吃完頭盤都已經半飽了, 朋友點了artichoke barigoule risotto/ truffle/ crispy artichoke ($70), 很大一碟, 意大利飯沒有煮到太軟, 最喜歡這種質感的risotto, 黑松露的味道超香的

有魚當然也要有肉, 這是食友點的. 份量也是非常大, 他分了一點給我, 很好吃呢我平常其實不太喜歡吃Sunday Roast, 但這裡烤得一點都不乾, 還有點嫩嫩的質感, 薯泥非常美味! 帶點蒜泥的味道, 自己不禁掏多了幾口來吃

最後這個Air-Misu是我很喜愛的甜點, 其實是變奏版的tiramisu, 但他們把masarpone cheese打成很輕的質感, 配上咖啡口味的gelato, 一定要試這個, 推薦! 做得很好, 特別又好吃

還是先吃點沙律,話你知,這裡的沙律選擇不少,而且均是美味,最適合又喜歡吃又要健康的大家。如凱撒沙律很新鮮爽脆,鮮橙蟹肉沙律更是坐擁澎湃的蟹肉,還有既清新又有肉香的西冷牛肉沙律,仲有芒果配杏仁沙律,等等等等……單是沙律這項目,已教人興奮。

之後是筆者喜歡的風乾火腿,配上哈密瓜,清甜軟熟可口。這裡的炭烤麵包,也從來好吃,還有一大堆的配料讓大家自行配搭,總會找到合心水的。而我的心水,正是香濃的蘑菇,以及爽甜的紅椒。

肯定不可錯過海鮮了,有蝦有蜆有青口,統統新鮮。最受歡迎的,莫過於是生蠔。來自法國的佳麗,實在吸引,教人吃不停口。喜歡生蠔的朋友,來盡情享受吧!

專人即席炮製的班戟,保証軟熟。有多款配料組合,如士多啤梨、藍莓、紅嗓子、芒果、焦糖漿、雲尼拿忌廉,諸如此類,喜歡怎吃,悉隨尊便。

主菜的選擇亦頗豐富,當然包含魚牛雞,Fish & Meat嘛!另外,其實還有意大利飯和三文治的。我們點了幾款,大家分吃。外形最出眾的,大概要數到春雞,原隻的上,香噴噴,已嬴了一半,如果肉質可再嫩口一點,就美妙。

以味道去計,我認為最好的是魚。是日的香煎鯛魚,真正的做到皮脆肉嫩,又不會太乾,墊底的青豆蓉亦加強了清新感覺,大家都很滿意。其實這味的賣相,也很討好的。

筆者所選的燒牛肉,兩大塊,送上來時,真想講句: 「唔使咁誇丫嘛!」幸而,大家都對此有興趣,我承勢分了很多給大家,才能完成。成品是燒得幾香,邊位帶肥的地方最為精彩。但配角的薯蓉從來不是陪跑,細滑且香,水準不遜於燒牛肉的。

甜品方面,Chocolate Pot上次經已品嚐過,今趟是保持水準。想不到檸檬撻亦很有驚喜,味道清新又醒胃,在飽嚐多款美食之後,跟上這件撻,很合適。

最後的Air-misu,輕怡,卻不失咖啡酒的味道,真的好吃,推介!

由星期一忙到星期六,在假期能舒舒服服享受一頓如此高水準的Sunday Brunch,是充電的最佳方法。

來到COLD STARTER BUFFET,也是非常的精彩,因為這裡的沙律用料十足,超.級.好.吃!這款US Cedar River Farm sirloin salad / mixed greens / shallot / crispy garlic有著嫣紅粉嫩的西冷牛肉在內,清新沙律中有著香濃肉味,再加上蕃茄的清甜,滋味豐富。

這是甜魔媽媽超愛的Devon crab salad / mesclun greens / cucumber / red onion / mandarin / mint vinaigrette!竟然拍得懞了,真失策~ 是的,大家沒看錯,中間成堆的就是啖啖肉的蟹肉絲,加了點沙律醬在內,好吃不得了,而襯上橙子、紅洋蔥等就更添清新甜味,高度推介要吃。

這是甜魔媽媽的第二碟沙律,基本上所有的食物都取了些,當中Smoked Caesar Salad及Roasted asparagus是encore。Bruschetta點上香草醬真心好吃,之後要再取,然後軟芝士、風乾蕃茄及雜菌也美味,而紅菜頭醃三文魚以及帕爾馬火腿也是推介之選。

而最令人著迷的,是啖啖肉的Devon crab salad,真的很美味啊!個人對蟹的興趣遠大於其他海鮮,不過無奈早前吃完六月黃後開始敏感了(是的,不知幾時開始,大量吃蟹後會敏感...),這天不敢再吃第2輪。

Brunch的主菜有七款選擇,其中Brioche / mushroom ragout / organic poached egg / truffle / parmesan (賣相很美,那蛋黃搖搖欲墜!! 不過沒試)、Hand ground Dutch veal and pork ball baguette / mozzarella / pesto / tomato sauce (賣相及味道可參加早前的lunch食記) 及Organic sunny side eggs / fried Italian roasted potatoes / red pesto / prosciutto是免費不用加錢,另外四款就另外加錢享用。

是日與劉總及Mui mui一起分享主菜,這是Mui mui的'Diavola' style French baby Chicken / pepperoni & apple stuffing / chicken jus (25 mins to prepare, +$230),春雞烤得十分香口,口味帶點香辣惹味,特別喜歡中間的pepperoni & apple stuffing,覺得它妹仔大過主人婆,比春雞本身更好吃。

甜魔媽媽點了Pan fried sea bream / cherry tomatoes / fennel / green pea pure (+$70),其實首訪晚市時也試了一次,不過這裡招牌吃魚嘛,就決定重溫美味。鯛魚仍是煎得皮脆肉嫩,香口吸引同時又保留了魚汁魚鮮,襯以清甜的櫻桃番茄、墨魚、黑橄欖及青豆蓉,除令色澤更加豐富、賣相更加吸引,亦令成品變得好吃同時更清新健康。

劉總是牛魔,就要了ROAST OF THE DAY的Prime rib of beef / roasted garlic mash / beef jus (+$140),那牛肉份量超大!細食的劉總,分了差不多一半給甜魔媽媽,當然我也不負所托完成了。其實成品牛味不錯,但肉質略瘦了些,不夠脂香油潤吸引。反而配菜的薯泥同時富有牛油及蒜香,美味不得了,這個我可是超不客氣,筆了又筆的!

來到甜品環境,有三款選擇,當日Mui mui有事早走,甜魔媽媽與劉總不客氣將她那份也吞下了,超級飽足!首先是Air-Misu / whipped mascapone / “lady finger” biscuit / Borghetti coffee liquor,由於主角的mascapone給打成泡沫狀,它吃起來比起一般的Tiramisu輕盈,甜度、芝味及咖啡酒味都是輕輕的,很大的一份也很易給消滅了。

很多人都大讚的Sicilian lemon tart / country clotted cream,其實甜魔媽媽有點不喜那檸檬的撻底較為稔身,之不過中間的檸檬醬芯實在酸新清甜又細滑,味道醒胃,吃時可襯上clotted cream,會再多一份柔美平衡~

最後是份量不小的Chocolate pot,面層輕盈香滑不膩的忌廉層下,中間的餅碎、果仁、脆粒等非常的新鮮,吃來口感清脆鮮香,拌以底下不會太濃太甜的朱古力慕絲,帶來細膩和諧又甜美的美好感受~ 劉總一早失去戰鬥力了,這個又是由我來清碟吧!

Brunch本來還附上咖啡/茶,但一人差不多KO三個甜品 (劉總太細食,有點掛住CEO了...),真的很飽很飽,最後連餐飲也放棄了,決定行落中環,好好shopping來解滯。總的來說,是十分美好的經歷,特別喜歡它家的沙律。而且店內也算baby-friendly,推介喜歡美食,又帶著小孩的家庭去吃!

So, had a business lunch today at Fish & Meat and was keen to share my thoughts1. Food - I enjoyed the Sea-Bream, it was very well cooked and the accompaniments of roasted fennel, roasted tomato and olives really set the dish off. On balance I think HK$187 Inc. service was probably a fair reflextion of dish and was happy to pay it. 2. So, had a business lunch today at Fish & Meat and was keen to share my thoughts

1. Food - I enjoyed the Sea-Bream, it was very well cooked and the accompaniments of roasted fennel, roasted tomato and olives really set the dish off. On balance I think HK$187 Inc. service was probably a fair reflextion of dish and was happy to pay it. 

2. Drinks - I had decided to go sans booze being a working lunch and thus ordered a lime & soda, not much more to say on that until.......We received the bill.

My lime & soda had (rather imaginatively) been itemised as a mocktail. I find this description more than touch creative for fizzy water and a slice of lime and nearly fell of my chair when I noticed it's equally imaginatively and grand price of HK$88 inc. service!

Seriously people this must be the most expensive lime & soda EVER, ANYWHERE???

I'm all for paying for good food and drink but it really leaves an acid taste (and I don't think that was the lime in my soda) when restaurateurs rip off their patrons in this way.....sure, make a profit guys but this is simply crazy!

On balance, I probably wouldn't eat there again for this reason and wouldn't recommend others doing so unless they are fully hydrated beforehand.

We started off our night with cocktails and I was told that the restaurant does not limit their passion to just food! The cocktail menu was creative and seemingly draws their inspiration from ingredients in farms and gardens.

Farm House Jam ($120) - the first cocktail I tried was the farm house jam with vodka, homemade blueberry thyme jam, and prosecco. Arriving in my favorite mason jar, the drink was gorgeous to look at with its delightful pink colors and blueberries sitting on top of the jar on a spoon. I was instructed to mix in the blueberry jam into the drink and the resulting flavors were sweet and splendid to drink. [4/5]

Pesto Martini ($125) - I also ended up trying this highly recommended drink made with farmers gin, pine nut syrup, and basil bitters. The texture was a tad thicker than usual while the flavors were one-of-a-kind. I love the refreshing taste of this cocktail as it was like sipping on a garden! [4.5/5]

Sea Urchin Bruschetta ($120) - our food started coming then and the first dish to arrive was this darling bruchetta with sea urchin and lardo di colonnata, which is cured pig's back fat! Hand-ground Dutch Veal and Pork Meatballs ($120) - I think these were hands down one of the best meatballs I've ever had! Paired with Fontina cheese and pepperoni sauce, the meatballs were moist and chewy with a bouncy texture while the spicy sauce gave them a nice kick in flavor. [5/5]

Fresh Tagliatelle ($130) - the tagliatelle here were quite unlike any other I have eaten as the pasta is freshly made everyday so they tend to be softer than the typical "al dente". Mixed with chicken and truffle emulsion while adorned with a piece of crispy skin, the pasta smelled divine and the taste was simply wonderful. [4/5]

Seared French Wild Whiting Fish ($230) - more lardo! The fish was very nicely seared as it was soft and flaky in texture while the lardo was irresistable. I loved the avocado creme and jalapeno which enhanced the flavors in contrasting ways. [4/5]

Kobe 32oz Prime Beef Rib ($1380) - even though I was stuffed at this point, I couldn't help but chow down on the Kobe prime rib as it was amazingly delicious! The prime rib was cooked perfectly with its succulent and juicy red meat. The meat was already pretty flavorful by itself but the accompanying sauces of bearnaise, salsa verde and beef jus was wondrous as well. [5/5]

Peter's Farm Dutch Veal Chop ($390) - the veal chop was another impressive meat dish with its crispy exterior while the meat inside remained soft and tender. It came with a salad with vine tomatoes, arugula, pine nuts and bacon that was light and refreshing to eat. [4.5/5]

Whipped mascarpone “Cheesecake” ($80) - we still managed to try 2 desserts that night with the first being a deconstructed cheesecake. I practically inhaled this dessert as the whipped mascarpone was so light and fluffy! The buttery shortbread crumble and raspberry sorbet were just cherry on top! [5/5]

Overall, Fish & Meat delivered high quality dishes through great ingredients and rustic cooking techniques. The service was prompt and friendly while the atmosphere was casual yet upbeat. It's the perfect place for a hearty meal with a group of friends to chill and hang out.

Visited Fish And Meat on a weeknight, the place was bustling and packed. Ordered a Garden Salad - gin with celery bitters, adorned with rocket leaves, a sprig of baby asparagus and a cherry tomato. But I love my gin and wasn't going to be daunted by the greens in them. It was sweet and refreshing, with just a tinge of what it said on the tin - celery. Mercifully, not overpoweringly so. Against my better judgment I bit into that cherry tomato that I thought served the mere purpose of being decorative. It was delicious. Sweet, savory, alcoholic. I could have done with 1 more. Or 5. (Disappointingly the asparagus was just its plain old self.)

Friends arrived at 9, and we thought it was too late to eat a massive meal so ordered the Dutch veal and pork meatballs from the small plates section to share as a starter. The meatballs were firm and flavorful, the taste of their constituent meat evident but not gamey in the slightest. They were doused in a zesty, hot and creamy pepperoni sauce that was so addictive that I couldn't resist mopping it up with the bread from the bread basket. 

Moved on to mains. I had the slow cooked Spanish Teruel pork belly porchetta with Italian fennel sausage, apple marmalade and gremolata from the "large" section of the menu. Now, caution is to be exercised here. When F&M says large, they mean business. It's not "HK large". The pork belly came in two great wheels - I was DELIGHTED. Good honest food. 

Loved the meat, every tender forkful tore away with just the right amount of pork belly fatty goodness. The natural flavors of the pork shone through whether on its own or complemented by the sweet sour tang of the applesauce. But the skin was chewy rather than crunchy or crisp. That's a tad of a letdown. 

Friends ordered sea bream and lamb shank but I didn't try enough to form an opinion - had enough to grapple with on my plate! 

We ordered Caesar salad, curried cauliflower and French beans to share. The salad was crisp and a little overdressed, the cauliflower was reminiscent of tandoori. Its spiciness worked really well with the pork. Didn't like beans so didn't try them, but friend polished them off.

Skipped dessert. Would come again with a worked up appetite!  

One gripe - the restaurant lighting is way too low. When you serve good, honest food, you want people to see it and appreciate it!

seafood risotto (+$70). Not totally worth it, but better than the sea bream. The chinese style one from a store in MK tasted better than this one. This one is creamier and cheesier, but no other taste to it. It didn't arouse the palette.

it lives up to its name! light and air-y, fluffy, ice cream on top, 2 or 3 pieces of lady fingers.
lady fingers had fully absorbed strong coffee liquor taste =D
could use more lady fingers though.
It looks big, but because its all air-y/fluffy/puffy, its not overwhelming.

best surprise all day!

The verdict:
most worthwhile was the ambience. food was so-so.. (except the air-misu)
heard the chef behind the kitchen always call "service!! .... service!!" to get servers to come to pick up the dishes and bring it to the tables.
servers skated the floor like loose chicken, i didn't get the feeling i was really taken care of. there were roughly around 10 here and there that pop up their face on the floor, but when you wanted to find one, only one or two was to be seen to catch their attention.
When I asked for my main dish like 4 times, each reply was "I'll get back to you"/"Let me check"/"It's coming"... is it really coming?! =(

servings of salad and oysters were insufficient. oysters ran out/stopped serving around 3pm.
There were about 10+ tables, totally about 30 customers for teh 2-4pm timeframe and considering its not the very chinese style type where you have to gang up at the the buffet table to fight for food, we still have to hover around to see when the salads/oysters replenished..

loved the atmosphere, the music, the setup, the tables/chairs, location..
loved the hardware! software has lots of room for improvement.
