Bouillon, constantly selected in various press as one of the best French restaurants to visit in HK, instantly brings you to Paris without having to travel. While their pricing may not be a "bistro", you can let it go once the dishes come in with beautiful presentation, taste and generous portion. This was my second visit and went with Scallop carpaccio, Rossini steak, Vol le vant, Rice pudding and 2015 Chateau Senejac Haut-Medoc. For the scallop dish I could taste a lot of deal and it was pretty refreshing, Rossini did not have the charm it had when I first tried but that could be just me, Vol le vant was filled with chicken and shrimp and the sauce was savoury enough to go with the wine. Visited the place on a fri evening so the place was super full but the service was consistent enough.

💭Thoughts: They are quite a small restaurant so the seats were quite packed. It could also be quite noisy if you are seated on the elevated level which has a low ceiling. Their dessert was the most disappointing part of the meal but their proteins were all very well executed!

i went to this restaurant to celebrate a friend’s birthday last week and the experience was not bad. the food was quite good, so i recommended it to a friend and from what i heard, what she experienced is one of the most terrible dining experiences i’ve ever heard of in Hong Kong.

first thing some of the staff in this restaurant need to realize is that you’re in Hong Kong, not in France. while it is a cultural thing to pay for water in Europe, there is no such practice in HONG KONG. apparently a foreigner waiter approached my friend and asked if they wanted sparkling and still, to that question they answered “tap water”. this waiter immediately got pissed, didn’t say anything (like a child), and just turned to the page on the menu that says the restaurant does not serve tap water and went away. the problem isn’t even whether you provide tap water or not but the poor attitude of your staff.

you would not imagine being treated like this judging from the amount of money you’re paying to dine in this place right? this waiter then asked the only Asian staff to serve my friend’s table from that point on. my friend further witnessed this staff not paying the same amount of hospitality to a local as he paid to a possibly French diner in a nearby table of a couple. honestly, this is truly disgusting behavior that can completely ruin a dining experience. train your staff properly before you serve your customers!

i regret recommending this place to my friend and certainly will not recommend it to anyone anymore.

We choose this restaurant for birthday dinner with advanced booking. The food is fair within our expectation. Main course of beef cheek is good.However, the experience is not good at all,1. Compulsory Purchase of water. No tap water or regular water will be provided. Since we read similar review before, just to remind other customer in advance.2. We choose this restaurant for birthday dinner with advanced booking.

The food is fair within our expectation. Main course of beef cheek is good.

However, the experience is not good at all,

1. Compulsory Purchase of water. No tap water or regular water will be provided. Since we read similar review before, just to remind other customer in advance.

2. Pushy service to ask you to order more wine and food. We had three persons and each order ed one glass of wine. Then the french staff asked if you guys want another bottle of wine while our wine had not yet delivered to tables. When we ordered food, french staff will ask if you guys order only one main dish while we actually ordered four appetizer.

3. Pushy service for last order and bill. During the whole dining experience, staff kept mentioning last order which is only 9pm while openrice said it was closed at 11pm. While we just finish two desserts at 9:20, the bill immediately arrived.

I, as birthday guy, felt very sad and regret at choosing this restaurant for celebration.

Rossini de Boeuf

Rossini de Boeuf is a classic French dish that typically consists of a beef fillet topped with seared foie gras and truffle slices (no more when compared with the old photo on openrice).

The fillet is usually cooked to medium, allowing it to retain its tenderness and juiciness.

I think it is a not wise choice to ask the staff to take photo for your celebration as they are not willing and inpatient to help.

唔係講笑 一開得俾佢嗰份量嚇親 😂 冇會諗到有咁多🤣 牛肉肉質多汁 烤得岩岩好 完全冇overcook 所以一啲都唔un 可以食到牛排本身嘅味道

Simple and comforting. Salmon was flavorful with the pickled shallots on top that added some acidity and balance the overall taste well.

Sea Bream's skin was grilled till golden and crispy, but the meat was mildly overcooked. Compare to the less impressive main, the simple mixture of zucchini noodle at the bottom which mixed with the balsamic vinegar and the fish jus was more outstanding.

Their creative signature dessert which put the creamy custard into a passion fruit. The creme blend with the fruity flavor so well, while the top is perfectly caramelized (Look at how the brown crystal broke when I dug into it🥹).

洋蔥湯幾有層次,係焦糖化嘅洋蔥但係完全冇燶味,算係我飲過數一數二好飲嘅洋蔥湯。不過佢真係幾鹹,我自己鍾意食鹹嘢,所以覺得冇乜所謂,但係友人已經覺得太鹹,飲咗兩啖就唔飲。

最後走到我哋嘅甜品,百香果焦糖燉蛋!真係非常之特別,從來都冇見過呢一個整法,百香果酸酸甜甜,非常之開胃,焦糖做得好脆,燉蛋偏向奶滑口感,值得一試!

之前在Bouillon吃晚餐, 以Bistro風格的法國菜來說, 相當有驚喜, 這次吃午餐也甚為滿意, 定價二百至三百元正正常常, 吃的也是晚市提供的菜式, 像是頭盤的洋蔥湯, 就是傳統帶焦糖甘甜的洋蒽, 以及大量半溶的艾曼塔芝士, 喝起來口感先湯後濃, 層次豐富. 主菜的油封鴨脾油香甘醇, 肉質鬆軟無筋, 鴨皮香脆帶焦香, Jus加入水果, 除了中和鴨脾的肥膩, 也為其提供自然的果甜.甜品點了自家製焦糖燉蛋, 一上碟同樣有驚喜, 不以傳統的小圓筒承載, 而家是以挖空的熱情果作容器. 熱情果外皮刮得很薄, 蛋香加上雲呢拿, 以為是傳統的味道, 但內容裡還吃到熱情果的酸甜, 應該是在調製蛋漿時有加入熱情果汁或果肉, 同樣少了一份膩感, 多了一份甜美的層次.The lunch of Bouillon is as nice as the dinner. The lunch of Bouillon is as nice as the dinner. The duck confit and onion soup is what you can taste in the dinner that is maintaining the high standard with quality. The crème burlee is really innovative with the passion fruit as the contented. The fruity sweetly taste of the fruit fuses with the egg that makes the whole dessert so refreshing.

Duck leg, apple confit, shiitake mushroom 
The duck leg itself was cooked to tender perfection, falling off the bone with just a gentle prod of the fork. The apple confit brings a welcome sweet note that pairs well with the savory meat.  The execution shows promise but this classic dish would greatly benefit from a lighter hand with seasoning. Once the chefs adjust the heavy hand with salt, the dish could become a real highlight.

Beef cheek, Brussels sprouts, red wine, shallots 
The meaty beef cheek is fall-apart tender after being braised to perfection in the decadent red wine sauce. The portion size is generous and there are plenty of sauce-soaked vegetables and strips of beef to soak up with the bistro's sourdough bread. While not particularly light or healthy, this dish exemplifies French country cooking at its finest with robust, comforting flavors that warm you to the core. The price is on the higher side but you definitely get what you pay for with Bouillon's inspired take on this classic French stew.

The first taste captures the essence of France itself, with flavors both elegant and bursting with indulgence. The foie gras was seared to retain its unctuous smooth texture while developing an appealing crispy exterior. The bittersweet notes of the apricot compote, still slightly warm from the pan, provide a lovely counterpoint to the richness of the fattened duck liver.

The escargots were nestled snugly in a dish and covered in a generous amount of buttery garlic sauce. The shell-less escargots were tender with just the right amount of chewiness and the sauce was rich and indulgent, recommended to mop up the remaining with the bread.

在上环比较清静的地方,环境超好 里面比看起来大很多,服务也很不错,下午到得早位置不少,但周末还是得预定,晚上人会很多。牛脊髓配吐司吃刚刚好 想追加一份的程度!鸭腿最推荐 汁多饱满,一起配的香菇也很出色 烤苹果很搭;最近好像换menu 了 main dishes 独份的黑椒牛排已经量很多了 之前有to share的那种;薯条小贵但好吃!番茄黑椒酱都会给;总的来说是不亚于fine dining 的小酒馆,下次到香港有空还会去
