Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

紅棗糕:見識見識,據聞用料簡單但製作需時。清朝宮廷甜品,大家記得試喔!
礙於有限水平,詞窮;不作詳細描述。喜歡就說喜歡吧!
午飯時間都頗忙,人多建議先訂枱。

我推薦比回港探親的家人,特意去幫襯。預定的蒸泥鯭蒸得過了火,其實蒸細魚很簡單,如果做得比在家裡煮的差,就不專業了!連最拿手嘅上湯伊面都失水準,平時好食到呢我要吃兩碗!面質煮到剛剛帶煙靭口感有少少嚼頭,吸收了美味上湯精華,嘩啦啦但嗰晚啲伊面淋晒!啲清湯牛蔔腩仲差,生平第一次食啲咁細件嘅牛腩!但籮蔔就好入味。椒鹽鮮魷啲鮮魷又係小巧、薄到呢連炸粉漿都厚過主料!又咸到呢食唔到剩返晒响個碟度。當店員提議帶走,然後知道原因時,仲話下次叫佢哋唔好落椒鹽!咁即係辣子雞丁走辣子啲friend ? 是本末倒置嗎?家人很失望,我就跌晒眼鏡

辣椒油,香辣兼備,除可以撈粉麵外,撈飯同樣一流開胃可口。上湯伊麵,絕對美味的存在﹗嚥韌香甜長長的麵條配上奪魂回味清湯底。辣椒油上湯伊麵,本身清清淡淡不加調味已滿分,加埋靈魂伴侶辣椒油,吸啜得十分狂野不能自拔﹗

蝦子豬皮蘿蔔湯,濃稠湯底非常好,不幸地蘿蔔硬削不爽甜,反而豬皮爽脆彈彈吸湯夠出色。蝦子豬皮蘿蔔湯伊麵,蘿蔔豬皮真的有點悶,即刻搵辣椒油上湯伊麵幫幫手,食味及氣氛都提升許多了﹗

麻婆豆腐,花椒油麻婆豆腐大愛﹗最鐘意有花椒的麻婆豆腐,辣辣麻麻食慾大增,搭埋肉碎及滑滑豆腐,吞兩三碗飯唔少得。高湯手打烏冬,色香味泊得住上湯伊麵,超美味﹗米香飄飄而彈牙的烏冬,被燙嘴濃湯襯托著。大口大口連湯帶烏冬倒落肚,食得痛快﹗麻婆豆腐高湯手打烏冬,兩者融合進化成花椒油麻婆豆腐高湯手打烏冬,她媽的色香味!麻辣味的烏冬一絕,整碗拿起全部一齊掃到嘴裡去,百味交進,非筆墨可以形容。

蜆蚧鯪魚球,炸得乾爽香氣撲鼻,脆脆無比的外層,陣陣鯪魚味道,外脆內軟滑。蜆蚧才是精髓才是靈魂所在﹗水汪汪的帶點點咸鮮,最緊要跟蜆肉一齊嘆,美味無比﹗

古法蒸鯇魚腩,久候多時一等再等,廿分鐘熱騰騰登陸。幾條冬菇絲搭著冬菜蓉,有種獨特而誘人的味道及氣味。嫩彈魚腩肉,滑滑多汁鮮味強烈,拆肉淋上魚汁豉油撈飯,不得了﹗其實半碗飯已十分足夠,大大啖魚腩配少少白飯,淋上魚汁豉油還有冬菜冬菇點綴,夾雜飯香滋味無窮拍爛手掌﹗梅菜蒸鯇魚腩,古法蒸較美味豐富,淨冬菜有點寡,好彩魚腩肥美啖啖肉,魚汁立立令。

辣椒菜芯炒牛肉,事頭婆大大力推介餐牌外的辣椒菜芯炒牛肉,好好好就試試﹗菜芯甜味一般般,微爽微汁微老。牛肉醃味濃濁,豉油味太重,沒太鬆肉食得到質感。辣椒牛肉菜芯齊齊撈香飯互相掩護互補不足,估唔到十分好送飯喎﹗原來係醃過的辣椒,鹽味突出, 撞得味道蠻不錯。

爽滑鯇魚皮,似乎魚滑粥粉麵及陳漢記處理得更加出色更和味﹗大量蔥絲薑絲紅椒麻油豉油撈成,食既時候當然要夾著薑蓉蔥花滾埋豉油才食到真髓。爽脆皮拖著麻油豉油捲著薑蔥齊齊趙,調味有少許單調,死氣沉沉靜蠅蠅。

生菜鯪魚球,無蔥真好,我一食蔥就反胃的啊﹗豉油湯底浸著嫩爽甜鮮生菜,還有大大粒結實起膠鯪魚球,落味恰到好處,鮮味突出。滷蛋伴上湯菜芯,嫩綠菜芯不老無渣粗幼皆甜無青味,還有甘香滷水蛋助攻,拼埋滾燙豉油湯清清地夠舒服。

和暢家常翅,必須預訂的家常翅,足足有 4 兩。原來係翅湯不是翅羹,爽爽翅針帶著翅群連肉,膠黏柔軟。和暢家常翅撈飯,來個魚翅撈飯食其氣勢及感覺,齋送飯有點乾。和暢家常翅湯飯,清淡湯汁充滿翅味,撈飯非常舒服。

清蒸馬友,不容置疑蒸煮出色,嫩滑緊緻雪白魚肉,天然魚甜味在齒舌間遊走。蔥花魚汁淡豉油撈埋白飯釀入嘴仔,美極妙哉。腐乳蒸排骨,腐乳醬調得濃稠,咸香撲鼻不嗆不濁,啜得起勁,肉質有趙頭,撈飯一流停不下來。炸豆腐,炸得透徹鬆化,乾爽外脆內嫩,陣陣豆香極香口,無得彈。

松茸黑蒜湯,清淡中飲到神秘黑蒜味,甜中帶點酸帶點咸,醇美追住飲。松茸黑蒜湯、滷水鴨片、北菇鴨汁魚唇、兩碗絲苗香飯,味味精彩滿足到不得了!獨居老人的殷物,柔和湯水配搭巧手小菜浮現住家的味道。雖然有食客反映平凡無奇,但非常合我心意,鯨吞兩碗飯都未能平息我的衝動!本想點雙滷水鴨掌做飯後甜品,但剛被隔枱搶先吃掉,陰鬼功。

北菇鴨汁魚唇,極奇爽甜的菜芯伴碟。北菇的骰有趣爽彈滑無比,魚唇彷似魚翅裙邊,充滿海味鮮甜,膠黏爽質地十分高檔,蠔汁完全滲透,直頭一小片可以送半碗白飯。滷水鴨片,其貌不揚看似乾爭爭,但鴨肉味濃不羶。滷水清香非凡,嚥韌瘦肉配爽脆油香鴨皮,無論如何都要食多兩啖飯。

滷水鴨片炸豆腐,墊底的炸豆腐亦不甘示弱,索盡滷水鴨汁,鬆化微脆,外香內嫩,搭乘鴨片齊齊塞入,食得我舔舔脷。雲苓白术扁豆衣鱆魚粉葛湯,清爽舒服淡淡然的味道,飲完生龍活虎、渾身是勁﹗清湯牛腩,腩肉鬆化滑滑味道清香,蘿蔔非常清甜,軟腍爆出可口湯汁,吃掉整碗飯,湯汁一滴不漏被消滅。

陳皮鴨腿湯,極濃豉油滷水湯汁滲入鴨腿內,肉質結實而乾,嚥嚥韌韌,雖然啖啖肉但欠肥美彈滑。味道過濃難以作湯飯,先試兩啖都係吃不消。五珍湯:靈芝、姬松茸、舞茸、猴頭菇、蟲草花,不含半粒味精的靚湯,補身補健,清淡有益,熱騰騰越飲越好味。金蠔皮蛋瘦肉粥,瘦肉竟然係肉碎,嚥韌而味道偏淡,幸好粥底有微微肉甜,搭著可口皮蛋享用仍是不錯。金蠔肥美鮮味透頂,甘香滋味,鬆軟滑滑回香不斷。

豉油皇炒麵,芽菜無草青味連我都食得到,爽爽水潤只不過甜味不足。生老抽比例巧到好處,咸香不濁,麵質軟彈。豉油皇炒麵撈金蠔皮蛋瘦肉粥,最愛麵條拼粥水,麵跟粥可遠係天生一對﹗滾熱辣地融合,將威力發揮極至,味道提升千倍萬倍,食得津津大味。

椒鹽豬扒,苦等十幾二十分鐘,終於隆重登場。外層微脆咬到索索聲,堅得堅正﹗肉質有咬口,味濃非常出色,配碗菜飯必定不得了﹗看得到的肉汁閃閃發光,外脆內軟美味的選擇。老黃瓜赤小豆排骨湯,不太喜歡黃瓜湯,明白有益都照要吧﹗清淡無味精,熱熱灌入暢快。生滾魚片粥,早粥比夜粥好食得多,有滾水味既?加過水嗎?粥底非常淡近乎白粥味,少有的要我加豉油增味,魚肉有點鞋有點魚鱗。

京蔥燒魚,煎封到金黃色,貌似飛起一樣狀甚生猛﹗魚皮焦香極鬆脆格外索汁,晶凝通透紅燒汁,香甜帶著清新京蔥芬芳,魚肉細嫩,淨食可口,撈淡口粥食同樣一絕。北菇螺片魚唇雞湯,菇味特濃又突出,濃郁雞味魚唇味緊隨出動,黏厚的湯汁格外可口,清新住家湯味道,柔和輕甜熱熱不停灌大滿足。

滷水拼盤:牛舌、墨魚、生腸,軟綿清香牛舌片,嚥韌甜美墨魚薄切,爽脆清甜鮮生腸片。上湯伊麵,等了又等遲遲未到,隔離四眼肥仔遲來先上岸,已經啜得如火如荼殊殊聲喇!苦候多時終於登陸,滾熱辣看似腍啤啤,大大口吸入竟然彈滑,完整幼幼長啜長有,上湯散發陣陣菇味雞味可口美妙。拖著大量辣椒油狠狠地吸啜,刺激醒神惹味無敵﹗微辣帶甜,香香的帶少少花椒味道,跟伊麵無比匹配。

咸魚蒸肉餅,極度邪惡呢﹗我有顆正義的心當然要立即消滅殆盡,忍不住要出必殺白飯來應付,人家其實唔想食飯架,太過份喇﹗彈牙幼嫩爆汁的肉餅啊,醃味清新實力萬軍,加上梅香咸魚肉撈啖飯,真係好味的暈得一陣陣。

清蒸瓜子斑,火喉剛好微微黐骨,肉嫩到無朋友,斑肉濃濃海魚味道,經濟合理物超所值 $98。沾上魚汁豉油,多多肉搭少少飯,所有精華一次過塞入口,爆棚大滿貫﹗連魚骨魚頭魚鰭都啜得乾乾淨淨。

南北杏白肺湯,我還預料屬奶白色的杏汁燉白肺,完全搭錯線﹗比清補涼更清澈的湯水,飲落清淡陣陣豬肺味道,甜而不腥。咬啖豬肺,軟綿彈滑清新脫俗。

古法釀涼瓜,腍腍濕濕的涼瓜甘香獨特,捲著實淨鯪魚豬肉餡,清淡的芡汁特顯其樸實的家鄉風味。兒時絕不吃涼瓜,開始喜歡吃涼瓜都係近幾年的事,半生瓜就係半生瓜。老媽係老客家,反而依家有點懷念老媽做的甘甜味濃燙著嘴豉汁炆釀涼瓜呢﹗

客家咸雞,三黃雞特別清甜,雞味甘香,皮薄肉滑,浸得陣陣咸鮮四溢而不濁。嫩嫩靚髀滴著肉汁,夾著大量薑蓉更香口醒胃不油膩。金磚蟹餅,炸得透徹均勻零死角,新鮮出爐香噴噴,感覺得到的熱力。狠狠地咬啖,索一聲香脆無比,金黃乾爽兼香口,炸得均勻咬落啖啖肉滿滿結實。蟹肉濕潤,乾濕反差,擦出火花。

家鄉蠔砵,新鮮出爐非常燙手,又香又彈又滑,真係非常可疑喎,鴨蛋做的嗎?不只是蠔加蛋的簡單,還有香料作伴,味道更加多姿多彩,油炸鬼鋪面格外香脆。大大舊香料蠔蛋,搭著少少飯塞入嘴仔,那種澎湃的滿足感受,非筆墨所能形容。清蒸西星斑,游水海魚那有得輸,拆肉拌飯淋上魚汁豉油,嫩肉香飯夾甜汁,好味到不能哼出半聲。

豉油皇煎蝦,壓軸登場鑊氣十足﹗糖及豉油達到黃金比例,咸甜平衡美味。蝦肉爽甜,混得精采,損得暢快。暖蜂蜜,阿妹侍應強調幾次只有暖飲無熱飲,不用那麼執著吧﹗飲得到天然蜂蜜所調製,溫暖清新的味道。粉葛鯪魚湯,清淡到不能相信,非常薄的湯水,少少葛味,少少魚味,當開胃湯清清味蕾。

花雕醉雞例牌,溫度低於室溫,有著清涼的感覺。皮薄肉嫩,不乾不鞋,仍保有少許雞油雞汁。輕輕的花雕味不過份,溫柔舒服的酒香切雞肉。滷水拼盆:豬蹄、鴨胸、雞蛋、豆腐,送飯一流﹗豆腐炸過的外層格外香口索汁外濕內滑充滿豆香;雞蛋入味不過份蛋白彈蛋黃綿甘甜撞滷水回味無窮;豬蹄幾乎全部皮無瘦肉爽脆的豬皮膠彈滷水清香;鴨片嚥韌鬆化黏著肥美鴨皮特別的油脂香。

麵醬蒸黑倉魚,只得倉魚、吞拿魚、鯇魚?全部都不合眼緣,唯有格硬揀黑倉啦。沒有豉汁只有麵醬都無緊要。魚肉鬆軟嫩滑,跟白倉的實淨魚質完全不同,更滑溜更多魚汁。拆下大量魚肉淋上魚汁豉油,連大大啖飯掃入。魚肉鮮味無比,飯粒香醇美妙。

金牌碗仔翅,翅呢?無翅既?巢極都無金牌既?金牌呢?先來幾口原味,瑤柱雞湯味強烈,史雲生?肉絲彷如大海撈針,欠缺鮮肉的味道,使得整碗陰陰沉沉。寶湖暢和足料香甜滿分,就算加入浙醋及胡椒粉都無補於事。

五珍湯,是否淑珍、佩珍、玉珍、愛珍、惠珍嗎?真身係靈芝、姬松茸、舞茸、猴頭菇、蟲草花,食肉獸的我對素湯有點卻步,竟然菇味芬芳,香甜兼備,味道融和溫柔,即刻搶住飲多碗啦!冰鎮鮑魚,兩吋長大小只用麻油輕輕調味,食得到的鮮、趙得到的彈。醃青瓜亦出色,爽爽味道夠濃帶著麻油香,美味啊﹗

雲苓白术扁豆衣鱆魚粉葛湯,健康有益兼養生。清清淡淡有點像腐竹的味道,散發微弱的鮮魚味,不太飲到有鱆魚的味道。酥炸生蠔,新鮮出爐剛剛完成熱力迫人﹗已預料非常燙嘴,輕吹兩下慢慢放到牙齒間,仍然高溫。薄身鬆化的炸漿洒上椒鹽,提鮮提味。咬開噴汁,蠔汁鮮味濃,嫩嫩蠔肉,停不了一隻接一隻地消滅。
