【 Amuse-bouche | Brioche 】開胃小吃,Beetroot Panna Cotta ,蓋上旱金蓮如傘,蠻特別啊,beetroot 也有益腸胃,不過味道、口感、配搭乏善足陳,可惜,這是蠻漂亮的開胃菜,味道未能跟上。

麵包是 brioche。麵包做得很好,油潤、豐滿,有彈力。只是小妹覺得,扒房道菜式多 heavy,除非你吃海鮮,brioche 牛油麵包,也許亦重了一點。Sourdough 可能更合適。這裡只用橄欖油,沒有牛油供應,那把牛油刀似乎只是用來切麵包而已 ☝🏽。

不過要講一下,配 smoked salmon 還有一片 rye toast,那真的味美呢,而且那份低沉的味道相當配三文魚啊。

主角當然是【 Slow-roasted USDA Prime Rib of Beef carved from ‘The Trolley’ 】

服務員把 trolley 駛來,打開蓋,並會問你 thick or thin cut。傳統英倫的 roast beef 不會有厚切的,那是美國人樣樣要巨型的產物,在紐約,26 oz bone-in prime rib 比比皆是。小妹一向喜歡薄一點的燒牛肉,選擇了 thin cut,因為 thin cut (也算是 British cut 呢)淋上 jus 之後,更加入味。

那麼大塊牛肉無論你醃它多久,調味都不可能進入中心的,燒出來的肉 —— 最中心部位 ribeye 的 eye,是沒有調味的,它依靠就是 jus 帶出牛肉的味道,出色的扒房,必須有不偷工減料用牛肉、牛骨煮出來的 jus。

忽發其想,下次可以要一片 end cut。一大塊牛肉,越近中間的越 rare,大部份食家傾向 rare 的牛扒,小妺則覺得太生不太好味,反而 medium 更佳。 Mid cut 的 rib coast 固然好味,end cut 烤得更香,但可能太熟,兩者配合才完美呢。

扒房有不同的「哲學」,三藩市的 House of Prime Rib 用鹽把一大塊肉眼埋藏然後去焗,幾近慢煮,肉嫩滑,但缺乏了外層焦香。紐約 Smith & Wollensky 極傳統的烤焗做法,小妹覺得最佳(去年到台北 Smith & Wollensky 本想吃 prime rib ,原來台北分店是沒有rib roast 的🙄,但如果人數夠,可以預訂)。

還有, USDA Prime 肉質嫩滑,大家認為可 rare 一些,講到在英國吃牛扒,某一年到倫敦 Hawksmoor ( Air Street 分店)吃英國品種草飼牛,餐廳經理堅持 cooked medium ,皆因 grass-fed 牛肉比較「質感充實」,太生不好吃,medium 為最佳 doneness,小妹其實認同肉食不要過生(就是可以 rare 吃的美國牛肉,medium 還是更佳),於是從善如流,Hawksmoor 的 ribeye 果然上佳美味,記憶至今。

再者,slow-roast 不等於 fashionable 的 sou-vide ,後者有其用處,但烹調牛扒小妹不敢恭維(尤其是真空浸水然後 reverse-seared 那種),前者嘛,是有很多方法的,明火燒牛肉也可慢烤的,例如 spit roast。紐約 The Grill 的 prime rib ,spit roast 慢烤,工藝不凡,只係調味太多了,反而未見能勝過傳統的 salt and pepper 。

【 Jus 】文華的 jus —— 餐廳稱呼為 Red Wine Sauce —— 極濃郁卻肉味分明,之前說過,rib roast 中間的 eye ,很難入味,必須輔之以 jus 才盡顯牛肉之味。

【 Sides - Vegetables and Potatoes 】Root vegetables 是 roast beef 必備伴菜。尤其是這裡的 celeriac,真的又甜又香,那芹菜之香,跟牛肉一起吃真的夢幻美味啊。焗薯非外脆內軟那種,心不 fluffy ,卻蠻有質感,也烤得非常香。Yorkshire pudding 則有點靭,但做法正宗,喜歡的就喜歡,不喜歡可以另外叫 spinach (未知是否 creamy 那種)或者 mac & cheese,在《文華扒房》吃燒牛肉配美國 classic 配菜,完全可以。

順帶一提,文華的 rib roast 是可以「外賣」的😍。去年聖誕,家人到我家開 party,小妹就 order 了 rib roast,那一大塊 prime ribeye 已經 pre-cooked to rare,只需要放入焗爐按照自己想要的 doneness 烤焗即可,還有 Yorkshire puddings 及各種 sides 齊全。速遞送到家門口,十分方便,話四至六人份量,其實我們八個人都夠吃 😨 。

【 Figs and Ricotta Tart | Ricotta Ice-cream 】Mandarin Grill 的甜品一向都是陪襯性質,沒有甚麼可以說的,呃,今天的 figs and ricotta tart 竟然不錯喔。用 cheese 做甜品,如還有其他材料,切忌芝士味太重,尤其是無花果的清甜,倘若 ricotta 太搶糟蹋了上好的水果啦。這個 tart 味道和諧 spot on,還有極佳的 ice cream —— 雖然說是 Ricotta ice-cream,味道是挺 vanilla-y 的 。

【 Regular Coffee 】 這應該是小妹喝過高級餐廳中最差的咖啡了 😡,還敢收 $ 82 一杯?其實 Gaddi’s 幾年前的咖啡都不濟,近年改善了,但是 Mandarin Grill 這杯味道「苦」不堪言,應該是 espresso machine over-extracting (過渡萃取)所有不悅之味都從咖啡粉中擠了出來。小妹真的飲不下咽,告知 maitre d’ ,他為小妹換過一杯 Americano,味道算是可以入口 😌。

【 Madeleine 】手一碰,凉的。嗯。口感比較有彈性,不 powdery 也不如「膠」,已經忘記在 Petrus、jean may 和 Bâtard 吃過的 madeleine 是不是凉的,但凉的總感覺不太對。不要緊,最好的 smoked salmon、rib roast 和甜品已經滿足了小妹的 craving 啦,mignardises 如果美味,錦上添花而已。

不能不重提,小妹人生吃過最好的 madeleines 是在倫敦的 St. John。那家「肉食泰斗」 Fergus Henderson 的餐廳,由豆湯、麵包、凍肉批、羊肉沙律、牛心、鰈魚(plaice)、到甜品 madeleines 都是人生美味,連那一杯 house wine 都特別好飲的,奇怪,置身餐廳中就有幸福的感覺,那是小妹在倫敦吃過最好最開心的一餐啊。

【 總結 】

餐廳開揚,地方面積不少,layout 工整得體(較《文華廳》好得多),較淺色裝修令餐廳更明亮,帶著一份「未有越界」的 orderliness ,唯又與時並進,不會在在懷緬過去的風華,dining room 充滿現代感的 clarity 。疫情時候,那裡桌子之間有玻璃木框屏風相隔,除了防疫,也有助隔音,現在已經恢復正常,屏風都收起了(不知有無記錯🤔),餐廳雖非常熱鬧,唯聲量還好,耳朵不會受罪。

今天的服務十分周到。外籍(也許是菲律賓)服務員,熱情而細心,serve smoked salmon 和 rib roast,井井有條,手法純熟,沒有半點錯失,maître d’ 是香港人,old school 的服務,看得出經驗豐富,適度熱情,有點 reserved 的交流和世故的招待,為客人保持著一點空間,又沒有待慢,令人十分舒服。是那位先生為我們 take 酒的 order,也是他提議小妹換一杯 Americano。

好似上一次拿錯香檳事件,今天有這一位 maître d’ 去 manage,當然沒有發生。

文華扒房,好壞參半,好的真的很好,壞的 —— 不是很壞,但對 Mandarin Grill 這個「金漆招牌」來說則不可接受,那一杯咖啡失分太多,madeleines 也不夠好,所以總體來說這一次只能是 OK。單單 smoked salmon 加 rib roast,誠然是滿分的 smiley face 😋,還有以這個價錢 $ 788 三個 courses,說合理太含蓄啦,簡直抵食啦。

【 藝術 】

今天餐廳掛著畫作數幅,有客人特地走到畫前近觀,也是午餐一種風景。

小妹稍讀藝術和歷史,對於現代藝術的看法是,不似以前藝術為宗教服務也不再盡然呈現自然,現代和當代藝術除了批判,就是作品和觀賞人心靈的連扣,這種 bonding 就小妹來說是源自自己對藝術品歷史和景況的認識的感受,簡單一點說,感受源自個人經驗。那種感覺有就有,沒有就沒有,無需強求,為甚麼留學時小妹每每到 Tate Modern 坐在 Rothko 的 Seagram Murals 前凝視半天,卻未對 Barnett Newman 望上半眼?正是這個原因。純然欣賞 Newman ,當然也無不可既。
