后面就是寿司时间了,一共六道,每一道都特别棒,我是对寿司蛮挑剔的人,但这边不管是食材的新鲜度还是口味的搭配上,都让人很满意。尤其是第一道贝,厨师拿手一拍居然就卷起来了,可见非常的新鲜,味道非常非常好,可以说是我吃过的贝类中最顶级的。其他每一个都很赞,刷的调料也不是简单的酱油,每一款的味道都不一样,很喜欢这样的用心搭配。

接下来是一道汤,从贝壳里倒出来,把生贝肉直接烫成半熟,杯口抹了盐,像鸡尾酒一样的感觉,让这道汤又好吃又好玩。

最后还送了一个toro卷,味道也超级棒。吃到这里真的有点吃撑了,但是意犹未尽。

甜品是日本蜜桃和椰子冰淇淋,完美的收场,只是没拍照片。

总之,非常棒的一顿午餐,尤其是1000出头的价格,性价比真的非常高了。非常值得推荐的一家店,很用心,值得推荐。还会再来!

近幾年愛上的日本餐廳之一。😍無論選材方面,新鮮度,時令,師傅名氣,裝潢,真的無人能及,當然價錢也不是便宜的。如果你要求色香味俱全,選擇這裏一定冇錯。午餐價錢非常合理,但晚餐稍為略貴。這樣說可能有點誇張,但當你試過,你會覺得物有所值。每件壽司都配以特別的食法或醬汁襯托食物的鮮味特色。來到這裡,不能錯過的海膽壽司,師傅每件壽司配上半板海膽,無論視覺藝術還是味蕾享受,都值100分午餐,晚餐我都嘗過很多次,每次都不會令人失望,反而有驚喜。讚👍🏿

My second time here at Gin, to be honest I didn't enjoy my first time and that's when the head chef was there (strange enough). This time however I thought was a completely different experience.

Appetizers were good, especially the one with caviar.

I've forgotten to take quite a few sushis as the chef was quite generous and has given us a bit more than he's supposed to.

The overall experience was very good. This place is probably not the most traditional sushi place you can find in town as the dishes were slightly tweaked to fit the local taste but who cares as long as it's delicious. I was very impressed this time and will definitely come again.

第二貫是金目鯛,配上七彩芝麻及紅芯蘿蔔蓉,這個配料現時很多壽司店都有用,不過個人覺得美觀的成分居多。今天的金目鯛是沒有炙過的,而魚肉太軟爛,不太滿意。

比起頭兩貫,這貫縞鰺明顯較佳。魚肉顏色質感漂亮,吃起來質感、魚味都足夠,搭配熟魚肝醬及蔥花,表現得不錯。

ハマチ 油甘魚
鮨種上的配料層出不窮,這貫油甘魚加上的是柚子胡椒蘿蔔蓉及蔥段,帶點酸味,會干擾魚肉本身的味道。吃這幾貫時,我極力想去感受一下舍利的特性,不過舍利的存在感十分之低,基本上被魚肉遮得七七八八,只能大約嚐出其酸度不明顯,一般濕潤。

接著,師傅呈上一貫軍艦,做法是我比較少見的。吃下去有麻油、蔥花的香氣,追問之下知道魚料是用了,口感較黏濕。加上海苔欠缺脆度,並沒有太喜歡。

魚色紅潤透粉,細看有少許脂肪紋路,不至淺白,應是中拖羅接近大拖羅的部分。這片拖羅沒有帶根,十分柔軟,但還是魚油比鮪的味道要突出些許。

滿滿的海膽自然吸引,不過都要稍為分辨一下貨色,並不是多就是好。這貫海膽軍艦的用料望起來比較一般,顏色偏些赤褐,瓣塊小,入口甜味不足但濃郁,像二三線品牌的馬糞海膽。這個品質加上不脆的海苔,無法令人滿意。

來到比較多炙り魚料的部分,先有銀鱈魚,紋路被炙得像個小塔,見到魚油微微冒起,可惜吃下感覺較粗糙。

整set之中做得最差的便是這貫,先不說舍利和鮨種沒有結合得緊緻,壽司的形狀也不理想。除此之外,魚肉被炙得幾乎是熟掉,加上蒜片及漬洋蔥配料搶味,十分失望。

鯖棒壽司
有到過関西遊行的,可能會見過鯖棒壽司的身影。為了能延長魚料的食用期,古時近海的人就把鯖先用醋漬,可能再加以炙燒,舖在舍利上,製成棒壽司翻山越嶺送到較內陸的町去,而鯖棒壽司特別見於京都地方。與上一貫鰹剛好相反,鯖棒是今天的No.1。從橫切面可見,舍利、紫蘇葉、鯖魚、白板昆布層層遞進,賞心悅目,入口也是被層次完美擊倒。魚肉炙得剛好,下白上紅,魚皮金黃。

本來師傅大意,只做了十一貫給我們,提醒之下補回一貫「加料」毛蟹壽司給我們,份量特別足夠。毛蟹拆肉成絲,混入蟹膏,此品還額外加了香脆的櫻花蝦,鮮度不突出但誠意搭救。

最後的鮪魚蓉手卷亦無甚特別,就不浪費篇幅介紹了。總括今餐,我常用到「不甚特別」、「普通」、「一般」,應心中有數。近來常吃到整色整水的壽司,覺得有點畫蛇添足,甚至喧賓奪主,此風不可長。雖說性價比合理,但個人不會特別推薦去這家,除非是說環境優先食物其次,或者有相熟師傅,否則有更多選擇。

The meal started with a varied appetiser selection and my favourites are leatherjacket fish sashimi wrapped by lotus leaf,  hokki kai(北寄貝) sashimi and the sea urchin tofu, fresh and delicious.Other highlights of the sashimi dishes were the flounder and flounder's liver with miso sauce(middle and right) and Pacific saury served with shiso leaf(left).When I got to the main sushi section, the fatty tuna is always the best to try out, which looked just like raw beef and was just as fatty.Unfortunate
