依家每個月都有幾間以各樣名目新開嘅鮨店,想信大家都中過伏,今次我就試咗以師承米芝蓮二星廚嘅師傅主理,打住米芝連二星旗號嘅 Sushi Kei ,lunch 十二貫只係$498 ,如果真係俾到日本高級鮨店服務,同壽司, 絕對係超值! 我係為咗「師承北海道米芝蓮二星廚師五十嵐信幸的峻師傅主理」 尼幾隻字去試,所以Book 位時特別要求當日希望坐峻師傅主理嘅位,最後用餐當日係安排到峻師傅,峻師傅為人健談,用餐氣氛唔錯十二件壽司中我個人最鐘意墨魚師傅用咗少少炭鹽提味、伊佐目、輕輕火炙過喺深海池魚、同唔多lunch omakase 食到嘅野生拖羅。Sushi kei 確實可以食到出面比較少omakase 會比嘅食材本身Sushi Kei 係值比好評,可惜太多細微地方扣分只可以俾OK , $498 我覺得係可以接受,但完全唔可以用米芝蓮級數去比較,雖然峻師傅比我之前食過嘅壽司師傅算中上,但喺改魚同握功,都未到日本高級水平所以扣咗少少分 ,另外$498 只係比亂排平價海膽扣少少分, 服務方面雖然佢哋好有熱誠,但明顯唔係well trained 又扣分,加上相信有唔少人都預到,佢哋booking 好混

服務方面雖然佢哋好有熱誠,但明顯唔係well trained 又扣分,加上相信有唔少人都預到,佢哋booking 好混亂,坐位空間有少少迫加上師傅們喺大陪份客人仲未食晒已經用洗潔精清洗準備午市落場(未夠三點),正常都係收拾食材、刀具等,客人未食完就已經用洗潔精清洗刀具廚具真係少見,因為好影響用餐中客人嗅覺,相信大家可能都聽過,日本有啲師傅甚至唔俾客人噴香水

用茶碗蒸作開場,是一貫OMAKASE風格,底部加入百合,是較新穎的做法,配上醃海蜇,醒胃亦喚醒味蕾💓

首貫蜜柑鯛,味道清淡,低調進場。在墨魚上灑上竹炭鹽,提升墨魚的鮮味,不錯。帆立貝配上新鮮生紫菜,整件入口即溶。考驗師傅刀法的鮮赤貝,十分清甜爽脆,師傅切法精緻,沒有吃過如此美味的赤貝呀😍牡丹蝦甜美細滑,如牡丹在口中盛放耀彩。
針魚不常吃,加上薑蔥,有點像日本吃地雞刺身的味道,很中式的感覺🐓在吞拿魚醬油漬上加白蔥,增加味道層次外亦不失平衡,是最驚喜的配搭。在傳統烤爐上微燙一下的深海池魚,配上木魚花醬,在充滿油脂的刺身上嚐到煙熏味,有趣至極🐟本人十分喜歡這個自製木魚花醬,求食譜‼️

接近味聲,是我每次必吃的三文魚子壽司,灑上少少柚子皮,不腥不咸,魚子油和清新的柚皮在口中遊盪,稱天作之合🍊還有我最喜歡的海膽壽司,店家嚴格挑選最上等的海膽,因此口感十分順滑,甘甜如奶油般軟綿綿的質感,徘徊在齒縫間,久久未能散去🤤油甘魚的油脂顯得刺身晶瑩,魚油豐富,加點柚子胡椒醬,能平衝味蕾,美妙的吃法🤩最後的拖羅,作盛宴的總結,把濃郁的天然魚油甘香停留於此刻,使人回味無窮🎶🎵

在麵豉湯上灑上大量的河豚蔥💚作為蔥怪的我當然喜上心頭。甜品靜岡哈密瓜,先品嚐哈密瓜的原味,再灑上威士忌,又是另一番風景🍈🍈🍈(以後都要這樣食哈蜜瓜!)

最後要說說餐廳的貼心,在去女洗手間時,留意到內有牙線丶漱口水和衛生巾提供給各位女性,就是少了點清香的花味🌸這次經驗十分愉快,儘管現在沒有晚市堂食,大家亦可於午市光顧,推薦大家試試💕

今日同朋友訂左位,去灣仔食日本料理。「Sushi Kei」主打廚師發辦Omakase,所有食材都係由日本直送到香港,再由大廚為客人即叫即做,絕對新鮮。餐廳是日式風格,所有既裝飾同擺設都好有居有日本特色。環境舒服,最岩慢慢享受。蜜金錭食落肉質柔軟肥美,口感嫩滑。墨魚好漿口,再加上海鹽,柚子皮,口感鮮味清香,好有驚喜。池魚既肉質好柔嫩,口感非常油潤,整體魚脂甘香。鰤魚本身魚味超濃,口感油潤肥厚,脂膏豐腴。三文魚籽,口感鮮甜爆汁,又不會過咸,岩岩好。日本靜岡蜜瓜香甜多汁。真係一道比一道精彩!
