蔥吞拿魚手卷: 口感柔嫩
麵豉湯: 由赤麵豉、白麵豉和越前麵豉混合出來的, 味道會比較甜
柚子味雪葩: 雪皅含有新鮮果皮,柚子味非常濃郁

整個過程壽司師傅都熱情跟我們交談及介紹食物的知識, 是一個非常愉快的過程。

吞拿魚赤身:是吞拿魚近背部位置,魚肉脂肪比例少帶筋,口感較結實魚味濃郁。

大拖羅:顏色粉嫩,油脂滿溢,入口即溶,非常美味。

黑鯥魚:黑鯥屬於高檔次食材,口感柔嫩軟腍,十分好吃。

海膽:顏色鮮艷,一看便知新鮮無比。每件有四粒海膽,十分滿足。

鯖魚:鯖魚鋪上白昆布外層夾片紫菜,口感豐富,鯖魚味道濃郁。

蔥吞拿魚手卷:吞拿魚口感柔嫩,混合一點紫蘇葉味,令整體味道更豐富。

麵豉湯:由白麵豉、赤麵豉及越前麵豉混合而成,比一般麵豉湯味道更香甜濃郁,不會死咸。
柚子味雪皅:雪皅帶有新鮮果皮,柚子味突出,令整餐完美作結。


用餐過程中,服務員十分殷勤,經常來倒茶和收拾枱面。師傅亦一直與我們傾談,他會告訴我們一些魚類處理的知識,個人心得,以及如何品嚐不同壽司等,十分專業。我和朋友好奇這裡的壽司飯跟一般珍珠米不同,師傅說這裡用的是純情米,是老闆沿用多年的米種,難怪米香十足,黏度適中,沒有珍珠米飽滿黏度高。整體用餐體驗十分愉快,能與師傅交流食材心得,一邊享用新鮮食材,我想這就是吃師傅發辦的意義吧。

星期四晚、Walk in有位,點了$1880 的set,原個海膽入不了口,其他刺身壽司沒任何一款值得回味,吃了幾款便已經覺得沒需要拍照了,餐廳環境不好、座位非常迫,所有座位零距離,手踭撞手踭,師父不專業,為了新來的客人、拖慢吃到一半的客人,節奏控制非常差,雙手一直到處摸(起碼幾分鐘)一直不洗手、等他終於肯洗手了,洗手的水沒擦乾便直接摸魚生,那條白色抹布拿到洗手盤沖一沖水、扭乾繼續,沒下次、不推薦、差!
