本身諗住book隔離間igloo,但因為廣告原因太受歡迎,所以一早己高朋滿座,入左waiting list ,所以最後因禍得福食左尼間the ocean,一入到去係無人,嚇左一嚇,我和朋友都係超級食家,喜歡到處尋找美食,我們點了各一set既主menu,由頭盤,開胃小點到最後茶點和朱古力都令我驚喜連連.每組食材都有著奇怪又大膽的想法卻出乎意料之外的好好好食,味濃皮薄脆香甜

FIRST WAVE - undoubtedly one of my favourite dishes! Brittany langoustine (also commonly known as scampi or Norway lobster) is often described as the new marker in haute cuisine for its succulent texture, and to our expectation, it is perfectly pan-seared to retain its freshness and richness from the sea. With the addition of the earthy buckwheat lace, black pudding and beetroot sauce to give a hint of sweet finish to the dish, it leaves us wonder how this small piece of seafood contains such intensive flavour that lingers in our mouths.

今日終於來到一間期待已久嘅餐廳 The Ocean,餐廳位於淺水灣一個商場以內,這間餐廳其實我一路都非常之想來,今日終於俾我有呢個機會可以趁着朋友的生日聚會過來享受一餐,一入門口已經被無敵景觀及華麗的落地玻璃吸引住,餐廳所坐的位置亦相當闊落,背後有着這間餐廳的賣點水母水族缸,這間餐廳的餐單會跟着廚師的想法定期更換非常美味的鱸魚大家估唔估到係咩呢?非常適合我呢類對芝士特別鍾情嘅客人呢餐法國餐都食咗差不多成三個小時,嘢食味道來講其實不錯,裝飾亦相當吸引,唯一遺憾的是沒有飽肚的感覺

之前晚餐来过,蛮不错的。但今次不一样,Sunday 驾车过来浅水湾lunch,valet parking 没了,唯有找个远点的付费停车场,入了餐厅,点了sparkling water, starter and main course, 上了水与面包后,等了好些时候才上头盘,算了,但是等主菜却等了超过40分钟,别人晚来的都已经上菜了。举手问问,洋人Captain 过来道歉,原来没有落单,希望送我们wine, 但我们不喝酒的呢,最后说明情况,结果干脆免了价钱差不多或更便宜的 starter, 那我们也真的觉得算了吧。

Pan seared langoustine tail and claw with black pudding with sweetened beetroot source, I usually not a fan of black pudding becuz of its heavy taste but this one the taste is not strong, langoustine texture is springy and fresh.

'Unforgettable' this word keep looping in my mind after visiting The Ocean in Repulse Bay. (Run by Le Comptoir, who also bring us Bibo and Tri.) .▶️The XO, King prawn, Black Garlic didn't disappointed me. Perfectly cook with the proper amount of Tom yum Kung Soup and XO sauce. King prawn is fresh with a superior quality and the Black garlic is gooey-soft and taste sweet! .▶️And, What a wonderful presentation of the tuna tartare? I think you dun believe this is a tartare, right?! Haha!! See the oce

我們特意在樓下的酒吧喝一小杯等天黑才進去吃飯的,可是已經沒有窗邊的位置里了當初以為這裡偏僻,又是閒日,應該沒什麼人來的,可是我錯了,這裡實在太正了!所以平日近窗的台都被訂滿了環境:餐廳裏面的格局是長方形的,一進去職員就告訴我們,前面的位置是用來開party搞event 或者喝酒的,再進去裏面一點才是吃晚飯的地方。晚飯的地方不算大,大約有8張枱。用的是沙發櫈,坐的很舒服,也很寬躺。整個落玻璃看到星星和海景非常正,雖然我們坐的位置有點遠,但還是看到一點點的,唯一不足的就是我們前面的一班食客,她們一來,整間餐廳的氣氛都給她們破壞了。。。真的是三個女人一個墟,何況是五六個。。。其實聚會就不應該來這些地方呀下次我一定要預約窗邊的位置環境實在太浪漫了!食物:我們叫了一個dinner set 和一個主菜,個set dinner的主菜是配龍蝦肉,成set 食物都好正,那種美味你要來試一下才能感受到,真的無法形容。另一個主菜我們叫了碟魚,那一碟魚雖然很滑但是沒有什麼味道,不建議點。如果二人來的話建議點兩個set dinner, 因為個主菜像starter ,而且不便宜,叫個set 會抵好多。服務:服務非

,那種美味你要來試一下才能感受到,真的無法形容
。另一個主菜我們叫了碟魚,那一碟魚雖然很滑但是沒有什麼味道,不建議點。如果二人來的話建議點兩個set dinner, 因為個主菜像starter ,而且不便宜,叫個set 會抵好多。


服務:服務非常好,服務員都經常過來和我們聊天,非常熱情。


總結:這間是我暫時吃那麼多法國餐里最值得推薦去的一間,無論環境食物都是最棒的
,在這裏吃法國餐和在市內吃的感受真的完全不同。但記得要預約在窗邊的位置哦!快來感受一下吧

一直想到THE OCEAN望住水母食飯而家終於有機會!地方超大,行到最入先到坐位~坐位是貝殻造型~~最近轉了法國MENU~5 or 8 set courses聽介紹是特別請了法國星級大廚研究的第一道食物,STAFF表示要用手食,(所以沒有拍照)一咬開個波球,成口充滿海洋的咸咸的感覺超有趣!之後的Ocean Breeze 也keep住你沉醉在海洋之中每一碟都主角海鮮都好新鮮好好食~~全部都有分子料理元素帶子個碟超足料,仲要用北海道產的~用檸檬汁做SAUCE好醒胃碟碟都食得玩得睇得不過甜品既咸甜交織就有D唔係幾夾朱古力搭PARSLEY⋯⋯ 個人見到綠色會希望係抹茶黑色包是墨魚汁包~~可惜海膽的味被HAZELNUT BUTTER FOAM蓋過了我不太好CREAMY 的SAUCE最@有份小禮物

They were incredibly understaffed, only 2 waiters to serve 5 tables, on a Sunday night. As a result, each course took forever to get to the table, way too long even for fine dining standards. The whole dinner took 4.5 hours. Even the valet parking was closed by the time we were done and the parking staff had to relocate our car to street parking and deliver the car key to the restaurant before he got off work that night. Also due to the long wait, the hot dishes were always just luke warm. No h

昨晚已預訂在這裡晚膳,早到了一点便在Ocean 的酒吧喝了一杯日本17年的威士已。因尚未日落便可以看到優美的海景。看到 bar tender 很專業。在酒的冰塊上印上公司 logo. 又介紹各種可以加入酒中的香料。到六時半便有人帶入座。各点了一個五款菜式的tasting menu, 價錢$1088。每款菜都是海產以配合這餐廳的名稱。每款菜都有人介紹其特色。食海鮮當然要加杯白酒啦。慢慢地用两個多小時享受完這餐晚餐十分完美。

Great food great view, not so sure about the service received. Restaurant is famous by its spacious layout, booked in 7:30 we were the first and only customer of the night until probably an hour later.  Table is next to kitchen, and follows customers join us specially around us, leaving 80% of the restaurant empty and packed in one zone.  Oyster appetizers was brilliant with lemon favour, but disappointingly surprised not able to order more as it is only offered as part of the dinner or whatever

Oyster appetizers was brilliant with lemon favour, but disappointingly surprised not able to order more as it is only offered as part of the dinner or whatever it calls ; no other oyster dish available in the entire The Ocean.  Staffs seems not very good at presenting the idea behind, the rather efficient reply "NO" is kinda big turn off.   
I did not intent to write this report until last week when i found out i lost the receipt, when i called for a copy, the staff managed to find out my dinner record, but not able to pass it to me straight away, saying that she need to pass it to MARKETING to contact me! What?! I have waited and waited and called again and given up.  
This restaurant is such an ironic failure in the city where situated in one of the most precious location in Hong Kong, putting so much effort in decoration, food was good too, but the menu design is a total underthought, staffs are not impressed and lazy, which is a shame.

This is Michelin star dining in a gorgeous room with a knock out view of Repulse Bay. As of today, November 8, 2016, The Ocean has no star yet, bit if Michelin has their heads screwed on right, The Ocean will have one or two stars soon.

With a Japanese trained Argentinian chef, the food at The Ocean has a zen like appearance, a delicate French touch, and an explosion of flavors. We opted for the smaller set menu at lunch, but we had plenty to eat. Our oyster pineapple starter was smashing, and each dish that followed was creative, unique and special. Service was very elegant and so Parisian. Yes, the waiter was from Paris. Management is also French, by way of Marseille. Our bill for four courses came to about 1000 Hong Kong dollars for two persons.

Everything about The Ocean was tres magnifique. Go now, before it becomes too popular and passé. The trip to Repulse Bay is a short journey for such a divine meal. Bravo and Brava!

Set Snail: The calms on the rocks are very tasty with herbs and spice that adds favour to the otherwise tasteless calms. Those stand alone calms have somewhat frozen mango taste in their sauce, which I personally liked for the hot summer!

It's made of passion fruit, Champaign granite, coconut foam and crispy meringue. Tastes good with some vinegar and olive oil. I especially love the sea salt and pepper seasoning provided to add favour to the dish.

Lovely slightly roasted fish as the main course with mashed potatoes in circles as decoration. I would say it's just the right balance of meat and veggi. Taste a bit salty but it suits my appetite.

Different bite size sweet things for us to choose from. A bit too sweet for we have had the ice-cream dessert before that. A mixture of salty bite size thingy instead would be good.

It was overall a good dining experience at The Ocean with attentive staff and great ambience. We did went to the rooftop bar, The Cabana, upstairs afterwards. They are run by the same company!

很愛這 Semi-Private Room,外邊的一排間斷式的磨砂玻璃屏風,令人感覺有如在珊瑚叢中用餐;而旁邊的深藍水族館更帶來滿滿的視覺驚喜~

來到這 Umi 壽司Bar,也特別講解一下:邀得前竹壽司主廚君島友紀雄加盟關係,The Ocean 常令人以為是吃日本菜的地方,其實只對了一半,餐單上大多是新派西式海鮮料理。整間餐廳都選用可持續的海產,特別值得支持!

這碟是BB蟶子,輕輕灼熟後肉質鮮嫩,再加上帶辣味的 Mayo 及紫蘇花,簡單清鮮迷人。上檯時注水營造的煙霧效果,也令整件事更添美好夢幻~

還有以仿珊瑚呈上的更多精緻前菜小吃,其中炸蝦水準很高,香脆得來吃得出本身肉質爽彈,加上蛋黃醬的香氣,非常迷人。方型的是鱈魚豆腐亦香脆不油。

起帆出海了,首先遇到的是海風。第一道菜是由 La Bottega 主理的 Sea Breeze -- Scallop, Onion Purée, Roasted onion, Consommé,帶子上檯後侍者慢慢注入洋蔥清湯,席間頃時香氣四溢。

La Bottega 的菜式並不花巧、卻紮實好吃,巨大鮮甜而肉厚的帶子,碰上鮮甜的洋蔥湯,更能突顯原有的鮮甜滋味;這陣海風,來得清爽!

大概前菜小吃太豐富,麵包特別安排在首道頭盤後上檯。老實講,就算不計同上的優質橄欖油,以及香滑美味忌廉牛油,這麵包本身也非常好吃!我很努力按耐自己,才沒有一件接一件的吃下去。

然後是 The Ocean 主理的另一頭盤 First Wave -- Uni Textures, Morel Mushrooms, Puffed Wild Rice, White Asparagus, Shiso Flowers。當造的白露筍,那份清嫩香甜不多講了,配上香氣馥郁的羊肚菌,以及鮮甜美妙的優質海膽,簡直就是集「清.鮮.嫩」的大成!

然後是 La Bottega 負責的主菜 -- Blue Lagoon -- Mezzelune of Potato, Smoked Cod Cream,首次吃到這樣軟滑的雲吞,配以鮮香嫩滑的鱈魚,賣相平淡卻帶來難平的激動,太太太好吃了!

接著有 The Ocean 的主菜 Great Reef -- Wild Turbot, Herb Crust, Green Peas, Farro, Ramp Butter, Spring Onion。兩間餐廳的分野很明顯,多寶魚在大廚巧手下,化身景致壯觀的礁石,面層香草層、底下青豆、蘑菇及薏米都帶來豐富口味,但最好吃其實是旁邊的烤牛油。特別一提,這野生的多寶魚是線捕 (line caught) 的;同樣的海產,以線捕比起捕釣對於海洋的傷害會小得多,亦維持海產的可持續性,大家也可以多加留意。

來到甜品環節,先有 La Bottega 的 Decompression - White Chocolate, Grapefruit。微甜軟滑的白朱古力雪糕,配上西柚已經清新,吃時再加點帶甘味的苦葉,竟有朱古力白變黑的微妙感,非常驚艷呢!

而來自 The Ocean 的 Coastal View - Guava Ice cream, rose, raspberry fluid gel, Pearl 更是美到不行。敲破薄脆的糖衣外層,中間帶玫瑰香氣的番石榴雪糕傾湧而出,再度攝人心神;不過成品味道酸度與甜度都強,相比之下較喜歡前一款的清新脫俗。
