重口味的川菜食到悶悶地,突然好懷念潮州打冷,OPENRICE研究左陣,搵到陳儀興尚潮樓呢間割凈、企理、現代化嘅潮州菜。呢度可以話將潮州菜去蕪存菁,不用怕坐得唔舒服,不怕烏煙瘴氣,更見一份高雅情操和清靜。我地人少少,點左3餸1湯和1粥1飯。方魚炒芥蘭,炸過的大地魚乾,魚香四溢,只放少量去炒菜,已有畫龍點睛之效,令爽嫩的芥蘭苗帶一點蘇香。食菜都食到停唔到口。打冷必點,潮州凍大眼雞,處理得超乾淨,骨比教粗,唔怕哽骨,魚肉都好鮮好濃味,現上豆醬的咸香,簡直就是一道開胃菜,再呷一口功夫茶,齒頰留香。仲有點少得滷水拼盤,很好的現搭,有爽口的生腸,彈牙的肥腸,入味的滷水豆腐,同埋薰蹄,仲有鮮美的墨魚片,真係樣樣都好吸引,份量亦都好足,兩個人都唔係咁食得哂。個湯聽個名就知巴閉,20年菜圃豬肚湯,用料非常稀有,老菜圃的味道層次豐富,香氣和咸香極致,完美蓋過豬肚不好的味道,喝下去就像用了很多材料的老火湯咁濃郁。

個湯聽個名就知巴閉,20年菜圃豬肚湯,用料非常稀有,老菜圃的味道層次豐富,香氣和咸香極致,完美蓋過豬肚不好的味道,喝下去就像用了很多材料的老火湯咁濃郁。

窩夫與蝦子餅之前光顧過鰂魚涌的陳儀興尚潮樓,印象非常好,日前二訪,專誠帶媽媽去品嚐高級潮州菜。先喝杯工夫茶,茶味夠香,一點也不苦澀。點餐後欣賞一下牆上的書法。打頭陣有「護國菜」($68),名字很特別,原來是潮州菜的代表名菜之一,口感滑溜,加入炸過的瑤柱,更添貴氣。鹹菜花蛤湯($78)有三隻大花蛤,鮮甜無沙,除了鹹菜,還有蕃茄,味道不錯。潮州魚丸肉碎煮汕頭白($228)的潮州魚丸彈牙有魚味,汕頭白夠入味。鵝三寶($298)的鵝肉入味,鵝腸口感爽脆,鵝肝甘香,配角豆腐也非常好吃,水準之作。頭抽鷹倉魚片($488)頗厚肉,肉質嫩滑,頭抽醇香,更能提升鷹倉的鮮甜味。

名正言順呢個一定係用花甲做主題嘅湯水,配上鹹菜嘅花甲湯都係第一次飲飲落去鮮香味美,加上花甲大大隻完全吸晒湯水入去肉裏面!真係好好飲!

朋友就叫咗個20年菜譜胡椒豬肚湯!除咗係心機菜之外!菜譜都可以食得!再加上胡椒湯啱晒啱啱轉季嘅我哋!飲落去暖胃又有營養!

位置喺鰂魚涌同太古之間步行大約10分鐘左右就到達1001大廈,都容易搵,再加上裝修非常高貴!都係打卡影相嘅好地方!

叫左咁多餸當然要叫飯,食潮州菜通常會叫潮州白粥,所以我地都叫左潮州白粥,粥底好清香🙆🏻‍♀️ 最後店員再為我地遞上功夫茶,首尾呼應🙆🏻‍♀️ 是晚潮州菜之宴就結束了👍🏻

食潮州菜我嘅首選一定係陳儀興其中鰂魚涌店又大又闊落如果港島區朋友想食潮州菜我地都會去呢間今次食食下仲見到保錡添食潮州菜一定會飲番杯功夫茶佢地用鳳凰單叢真係好香呀店員見我咁鍾意仲沖左幾次俾我 好好服務鵝三寶佢哋嘅滷水香得嚟又唔會太咸 滷得好入味鵝肉去晒骨 嫩得嚟有咬口 揀嘅鵝唔會好肥鵝腸好爽口 鵝肝真係好滑好甘香頭抽煎鷹倉鷹倉真係唔多地方有得食 仲要起肉都咁大件 條鷹倉應該好大條煎到外層有少少脆好香口 魚味比較濃冇俾頭抽蓋過 啖啖肉好正胡椒鹹菜豬肚湯胡椒香得嚟唔會太辣 豬肚真係好厚身肚肉苦瓜煲呢個煲嘅重點唔係煎香過嘅五花腩而係大大件嘅苦瓜 點做到有少少甘又唔太苦如果鍾意苦瓜嘅朋友一定要試下呢個綠豆爽清心丸食完飯食番個甜品 本身想食反沙芋但太大份都係揀碗糖水嘆下 呢個唔太甜我幾鍾意
