8- COURSE OPERA TASTING mEnU

1)Parker house /whipped brown butter (圖5-6之間)

為餐廳自家製麵包,fine dining 由麵包開始,已經需要做到最好,絕不是過場菜,當中whipped brown butter 用上黑蒜頭和日本白醬油自家調製,即使只吃麵包,也能感受到與眾不同的鬆軟。

2)Hamachi (Kansai) Caviar (Spain )

首圖,以及圖10介紹的,就是這道高質前菜,以及提供上菜時的儀式感短片。
侍應為客人帶來金色的箱子,內裡還有一圓型盒子,原來為來自西班牙的魚子醬就配上來自關西油甘魚粒,加上紫蘇葉,柚子醋啫喱 ,金箔,加上貝殼小匙,鮮味及矜貴感💯💯

極力推薦!!!

3)POLMARD Beef Tartare /Smoked Pike Roe

圖5那一口的前菜,其實為來自法國的Polmard Beef Tartare ,配上煙燻梭子魚子,帶出鹹,脆,鮮的不同感覺在一口中。

4)Jerusalem Artichoke Soup

枝竹忌廉湯,湯中有一塊雅枝竹脆片,據說很考功夫,要除去外圍的一片片硬塊,再烘乾才可形成,湯的味道啖啖濃郁。

5)Red Snapper/Tomato / Basel

圖6,為用上蕃茄羅勒煮汁香煎的紅鯛魚,帶出鮮嫩多汁的口感。

6)Kagoshima pork belly /Apple

來到主菜部份,圖2為鹿兒島豬腩肉,配上蘋果,中和了豬的油朦口感,豬肉軟腍,肉汁也能有效地鎖住,入口層次感非常豐富,很美味。

7)A4 Miyazaki /Black Olive/Muzu Kosho

另一道主菜,圖4,為頂級的A4宮崎和牛,配日式柚子胡椒,及黑橄欖,也是一道平衡感非常好的菜式,油脂豐盛。

8)Crab/ Risotto

圖7為蟹肉三文魚籽配意大利飯,為一道日式法式結合之作,不得不讚飯經過龍蝦汁調和,比一般Risotto更軟熟更好入口,中間的咸鮮味道完全帶出來。

9)Petit Four

圖8為甜品,並非一般的蛋糕,而是一道四式甜品,包括瑪德蓮蛋糕,伯爵茶蛋糕,可麗露,朱古力,甜度不算高,但帶來每一口不同的口感,滿足了甜品愛好者什麼都想品嚐到的味蕾。

整體餐廳的Fine Dining 非常完美,而且有多款世界各地的酒可配搭 ,加上有情調的環境,若尋求充滿特色的西餐,會強烈建議參考此餐廳。

姐姐快要生日啦😍,當然要帶她去慶祝啦🥳!!! 最近聽朋友講,上環的Bacchus Wine & Restaurant 勁好食,就帶她來試試啦!餐廳頗大,有室外和室內坐位。今天天氣好熱,我們還是坐室內好啦!一入坐便有wellcome drink😆,而且服務員還幫我們添了好幾次,也太慷慨啦!餐前麵包是餐廳邊家手工製作,好高質!包身鬆軟,抹上黑蒜牛油,勁好食!西班牙魚子醬加日本油甘魚,兩者都好新鮮,好正呀!牛肉他他來自法國,加上煙燻梭子魚,別有一番風味。雅枝竹濃湯好有驚喜,又濃又香,味道略為鹹了少少。我們upgrade了吃熟成過的三黄雞,雞皮薄脆,雞件滑嫩,超掂呀!最後有四款小甜品,有伯爵茶撻、曲奇、可麗露秒朱古力。各有特色,吃完也不膩。整晚服務好,食物又好,我給100分。
