— One of the best burgers I’ve ever had 🤤This beef patty was so well seasoned and cooked to a perfect medium, whilst retaining all of its juices. The American cheese was rich and went so well with the beef patty. The griddled onions were also incredibly tasty, soaking up all the flavours from the beef and cooked to a nice caramelised finish. The highlight was definitely the Henry steak sauce which was so flavourful. Brioche bun was nicely toasted and had a soft pillowy texture. The french fries seemed never ending! Well cooked and served piping hot, not to mention they had the perfect amount of salt.

— Any meat lovers paradise! This BBQ plate is so well presented and everything was barbecued to perfection! Just look at those colours! My favourite was definitely the baby back ribs which were so succulent and juicy, and were coated with this amazing barbecue sauce and rub. The beer can chicken was also up there, the chicken itself was tender and fatty, and had a strong aroma to it. Doesn’t look like it in the photo, but the chicken portion was pretty large! I personally thought the beef brisket was slightly on the dry side and overly salty. Overall an amazing BBQ plate to satisfy your meat cravings.

目光投向柔和巨人,西班牙 Rioja 眼前一大支 Balthazar 。Bodegas Roda Reserva 2015 ,乃 Tempranillo blend,on the nose 是豐滿的 black fruits,成熟的各式 berries,清晰的 toffee 和一點菜蜜與烏梅之香,而然口中比較平淡,不太 oaky,丹寧細緻突出而柔和,finish 的 spiciness 也佳。遺憾卻久等不能,一會已經消沉,配今天菜式,略為失色。

Steak tartare 美味,唯這頭盤有點過猶不及,斧痕略深 (a bit too contrived) 。一般 tartare 不外混合 gherkins、egg yolk,並以 tabasco 調味,那樣了無新意,想加點心思,可以理解。如果肉質上盛,我認為落一點檸檬汁,少許 zest,淋上 olive oil,幾滴 anchovy 「魚露」已成人間極品,還吃到牛肉鮮美,何用苦惱怎樣鬼斧神工。

Tenderloin,牛最貴的部位,lean and tender,也最「沉悶」,味最薄。6 oz,我一看「身形」太薄,心知不妙,果然 overcooked 了。對 steakhouse 而言,最重要是 doneness 之把握,就這點 Henry 已經不及格了。然而,這件 American Wagyu 牛柳是極高質素,肉味竟然香濃。而表面 crust 焦香,Henry 在烹調器材上無疑一流專業,如果每一位廚師對生熟掌握得好,應該是完美的扒房。As an aside,牛排旁邊的 black garlic aioli steak sauce(黑蒜蓉 + A1 Sauce),用於如此高質牛肉之上,無疑畫蛇添足了。

Josh Ozersky 認為最完美的 burger,只需 onion,beef patty,兩片 American cheese 相互成 45度角放在 burger patty 上形成一顆大衛之星,然後是普通的 American bun。這裡的 cheeseburger 就是 more or less such an ideal。當然「理型」中還有些「進階」,加入 griddled and caramelised onion 及 steak sauce 。那個 brioche,鬆軟美味,不是一般池中物的 generic bun 了。而 burger 肥瘦適中,只是肉味不夠。Fries 稍微炸得淺了一點,內軟但面未夠香脆。

BBQ Plate 雞肉煙燻味道迷人。白肉始終難以完美,胸肉你會覺得不夠嫩滑,肉厚味道也沒有深入 —— 但切記這是 BBQ,不是 sou-videing 喔。量度食物要用適合的尺度喔。Beef brisket 呢,expectedly tender and succulent,不過奇怪肉味竟然偏淡(注意,我是說肉味不是調味)。最漂亮的是 baby back ribs,味道、軟硬皆完美。

醬汁 —— Bloody Mary Ketchup 入口有點八角之甜,木之甘香,果然是香辛料間妙配。American BBQ sauce 中 cumin、allspice、paprika 等  ‘usual suspects’ 味美而沒有驚喜。最好是那 hot sauce。深赤土紅色下那沉鬱複雜之辣是 jalapeño 嗎 ?(Jalapeño 也有紅椒的),這是最好的 hot sauce 。

吃到這裡,看見這個玉桂卷的 size,小妹快要投降,但一啖之後,便知有堅持到底之必要。 那卷在 cast iron cocotte 中的 cinnamon roll,鬆軟潤澤,玉桂香味洋溢卻非 overpowering。那 blackberry compote 和 meringue 畫龍點睛,唯獨那 cream cheese frosting,「霜寒過猛」,cheese 味有過強之嫌,用回一般糖霜面也許更平易近人。

從Chef Nathan換上Chef Mario, Henry整體風格沒有甚麼變化, 同樣的燒烤和熟成手法, 再加上牛扒來源地的相同, 基本上不太吃得出兩位主廚主理手法的分別, 結論而言, 它的牛扒依然是香港其中一家最好的, 特別是其16安士重的Black Angus Ribeye, 來自德州的44 Farms, 質素是USDA Prime, 脂肉分佈平均, 油香豐富, 特別欣賞中間的肥膏, 不太厚但咬起來口感層次更分明. 從Henry開張開始, 除了牛扒的部位和種類外, 我也會開始留意它來自甚麼牧場和其特點, 像是44 Farms它本身只會提供Prime及Top Choice品質, 天然飼料和沒有任何激素的Black Agnus. 想吃點Carbo就點了Henry Burger, 麵包口感鬆軟, BBQ醬除了甜和咸香外, 當中的Smoky味道和焦糖味也令它比其他同類醬料更出色, 可惜的是漢堡扒口感比較單一, 在Juicy和肉香充足之後, 缺乏了脂粒的漢堡扒除了少了些油香外, 也令其更容易一咬就散開呢!

Match with 塊steak叫左一枝紅酒🍷,red by bottle嘅價位$900起,酒店嚟講唔算太貴。對於環境同氣氛無論同朋友gathering或拍拖都係唔錯嘅選擇,食物質素都算滿意,不過咁多steadhouse選擇小編未必會二訪🙈,5個人一張大枱坐得舒服,可惜上菜有點緩慢🦥,食晒starter等左差唔多半個鐘先上個steak,到最後因為太晏就無再叫甜品了😪。
Rosewood入面嘅餐廳都好難book位,因為真係好受歡迎❤️‍🔥,而且酒店會預先留起部份枱俾staycation嘅客人,小編今次提早兩個月book終於食到,大家一定要做booking呀📝!

Steak tartare 的味道酸酸地,當中有啲脆片增加口感,好適合做開胃菜。

既然一早已經決定要食什麼就直接order 了,只係要再揀選部位,我地就選了44Farm whiskey & ash aged bone-in ribeye, medium rare, side dish 係炸蕃薯條和露筍。

服務員會先攞份牛扒比客人睇下影吓相,然後就會點着佢,就像是一個儀式,燒咗大約20秒吧,之後就會攞去切開再上。見到切開嘅真身我哋嘅感覺就係熟左啲,而且番薯條有好多燶晒,服務員主動話換過啲薯條,牛扒都可以幫我哋換。呢啲餐廳覺得有客人唔滿意生熟程度係一個恥辱,十分樂意再做,但係我哋覺得冇需要,牛扒還是好好的,只是換了蕃薯條。

對牛扒的評分,個人只是覺得不錯,沒有wow,味道係好個人嘅感受,只是whiskey ash aged 的食味沒有和我們的期望對上。

因為炸燶左蕃薯條,餐廳送咗一客甜品,淨係記得有椰子味,不知道是什麼名,但幾好食的。

到此,我哋想去嘅扒房都試過了,心目中係有名次的,但係名次嘅嘢隨時都會改,只希望遇到更多的好味道。

牛扒搭配了略帶甜口的黑蒜醬、牛骨髓蛋黃醬(bone marrow béarnaise)及黑松露橄欖油。而扒房的芥末醬大概是我會特別留意的一處細節,雖然只是解膩的配料,卻也體現了餐廳服務的周到。

HENRY有7種芥末醬,當天嘗試了原味、幹邑風味和辣味三種芥末籽,十分特別。

Ribeye 牛味濃郁,應該係因為dry aged 嘅緣故,肉質鮮嫩Juicy,油脂分布平均,揀咗medium Rare,燒到出嚟生熟程度啱啱好!份量頗為大份,女仔可能會食唔晒。

果然係值得咁高評價
我同朋友每人叫左一份牛
推薦大家食Rib Eye
唔會overcook, 叫左medium rare 鎖得住肉汁
最重要真係食得出佢地既炭香味
係其他扒房食唔到既味🥰
Rib eye 性價比高

但另一款tenderloin 就唔太推薦
