聽師傅講呢隻蠔係日本全國比賽拎左冠軍。食落去淡淡的海水味,肉質肥美結實,少鐵鏽味,味道鮮甜。

白見貝
呢個就係日本既象拔蚌,上菜之前師傅會拍打一下,令佢肉質更加緊致,入口清爽。

鰆魚
馬鮫魚的一種,師傅燒左個皮,經過燒製釋放出魚本身既油脂再加上炸蒜,軟滑得黎又帶一點香脆,口感層次十分豐富。

西澳龍蝦刺身
加上燒製過既蝦頭膏,食用花同埋食用金箔。

吞拿魚下巴
嫩滑既魚肉帶一點膠質,油脂十分充足。師傅為呢道菜配上姜芽同埋醋,平衡返個油膩感。

膠原鯛
呢隻鯛魚食膠原蛋白長大,口感軟嫩。

墨魚碎
口感十分有趣,每咬一下就咬到一粒。

肉質軟棉得黎有點爽口。

右口魚又叫鮫鰈魚上面有佢既魚肝醬同埋魚鰭位既肉。

呢個係鮫鰈魚上面既位置,油脂豐盈。

兩隻海膽比你自己用紫菜包起,啖啖都係海膽,十分滿足。

拖羅手卷
師傅加左天婦羅碎,醃黃瓜,蔥,更加口感上既層次。

仲有茶碗蒸、麵豉湯、布甸蛋、咖啡雪糕!

想試的朋友們最好提前幾日book位,也可叫師傅們預留您們想食的食材。餐廳入面眼見地方唔係好大,可以容納到12-14人吧台位,另有兩間細房,每間容納4人。全部食材由當日餐廳預訂到的材料再由師傅決定我哋食物,當晚有以下兩款廚師發板可供選擇,$1080和$1380。之後師傅按照我們點的套餐去安排食物給我們。另外我哋預訂左一條喜之次,太好味,好耐冇食喇!深海池魚薄切配搭啫哩醋卷埋一齊食,肉質細緻,爽口中帶油份,味道甜美。縞蝦肉質肥美又有彈性,鮮甜猶勝甜蝦。華漣生蠔外殼顏色較白及呈金黃色,別看它外觀細小,開殼後包含的蠔肉相當豐滿,份量重且彈牙香甜,奶油味十足。喜之次好好食,燒過嘅喜之次油脂超香濃,有入口即溶的感覺,口感亦十分滑,證明呢條魚夠曬肥美。抹茶士多啤梨果凍綠茶味香濃,配埋士多啤梨很美味,很治癒。總括而言,這間餐廳除了食材新鮮外,師傅的廚藝也十分不錯,簡單的食材也有高超的演繹方法,下次經過天后區也會找時間再試。

好多人話,食嚟食去,屋企飯最好味,因為永遠會食得出媽媽嘅用心。如果出街食,又點樣知道廚師有冇用心呢?我諗最簡單就係睇佢嘅笑容。食Omakase 既時候,好多師傅都會講解下食材,但係講講下笑出黎,真情流露我都係第一次見。 🍖講緊嘅就係油坊住呢條魚,喺我食六件壽司嘅最後一件。師傅話哩條係好大條既魚,佢地係成條買返嚟,自己切割,我問佢地係咪會切俾客人睇,佢自豪咁話會啊,而且每次個個都舉起哂手機,仲好高興咁叫同事攞個 I pad俾我睇下之前的相,相入兩位師傅攞住條魚,笑到見牙唔見眼,我諗就係呢種對自己工作嘅喜愛,就睇得出佢嘅用心。件壽司的確相當好味,肉質爽脆,又有油香,師傅仲特別係上面加炸蒜,用酥脆對比增加客人對魚肉口感嘅體會。另一件好特別嘅壽司係骨膠原鯛魚,原來條魚真係食骨膠原長大,講真望落真係幾水潤,肉質又真係好Q彈順滑,身價一定不霏。仲有右口魚,如果唔問真係唔識,原來右口大條d,而且冇鱗,口感滑好多,左口就一般做薄切為主,而且今次仲加入右口魚肝,令到成件壽司特別香,更加細滑。 🍖刺身方便,有時候會覺得一片片嘅刺身,總係會同壽司相類似,變左越食越混亂d口味。今次嘅刺身就好唔同,漬左既吞拿魚

🍖刺身方便,有時候會覺得一片片嘅刺身,總係會同壽司相類似,變左越食越混亂d口味。今次嘅刺身就好唔同,漬左既吞拿魚切粒,加山芋蓉,龍蝦起肉,加入海膽同魚子,原條熒光海賊,同埋最好味既華連生蠔。四種嘅姿態都好唔同,令到刺身壽司層次分明。

特別講下呢種生蠔,肉質結實爽脆,以前食過有d生蠔,d肉太林身,唯有夾硬話creamy,有時有啲大少不一,自己食着歪d果隻感覺又會不爽。華連之所以喺日本一,就係因為佢完全唔會有以上嘅問題,隻隻大小均勻,肉質真係好爽,唔需要有太重海水味,反而加少少醋汁,已經帶出佢既鮮味。

🍖最後係海膽飯同埋吞拿魚蓉手卷。其實佢可以分成兩種手卷出,不過海膽放飯碗入邊,影相就靚好多,而且個紫菜可以由客人自己決定點樣配合。吞拿魚蓉手卷就超足料,由於吞拿魚蓉同飯都係打橫鋪喺紫菜上面,變成由頭到尾都可以食到吞拿魚蓉,而上面仲加左天婦羅脆脆,又係一個對比式去昇華個口感嘅好例子。

🍺配搭瀬祭三角九分,呢餐係滿足,長知識,同埋感受用心既一餐。
