到的时候已经下午4点半了 店里只有寥寥几人上次去千两是在圆方 晚上排队大概30分钟和友人一起吃了芝麻海鲜沙律 刺身 寿司等多种 感觉不错但今天只想吃素 要的日式番茄沙拉 纳豆拌青瓜 和两份腐皮寿司番茄很新鲜 沙拉汁清新青瓜很冰 纳豆不错原以为一份寿司只有一个 没想到有2个结果一个人吃完4个寿司 实在很撑腐皮寿司是在天后的悅鮨爱上的 腐皮温软带甜 配米醋的寿司米饭太美味千两的腐皮偏厚偏甜 整体感觉有点腻 这一局悅鮨胜出~~

腐皮寿司是在天后的悅鮨爱上的 腐皮温软带甜 配米醋的寿司米饭太美味

千两的腐皮偏厚偏甜 整体感觉有点腻 这一局悅鮨胜出~~

We’ve been there a few times before, and a lot more often at the Hang Lung Centre. The food there at both places are general high standard, and when Hysan Place was first opened, they really did serve good quality fresh sashimi. But only this time, they kinda let us down. We ordered a number of dishes from the menu, generally good quality, but with the Seafood Platter, which contain long leg crab, oysters, and some other sashimi which I don’t quite remember, the oysters were ok, tasty, long leg crab were also nicely done (not some stingy undersized crab), however, when it comes to the sashimi platter, they were a little bit disappointing, they were a number of tendon which just ruin the whole sensation of the quality of the sashimi, which ends up swallowing without much of a joy of enjoyment. Then, we ordered the Toro, which turns out to be another disappointment, when we first put our eyes on it, it didn’t seem right, it looks cold and frosy, as if it was just came out of the freezer, certainly not the best Toro I have.

Anyway, beside those 2, the rest was still ok, maybe they transfer their head chef to their new branch once Hysan Place was settled, but whatever reason, they need to keep an eye on their signature dishes, in order to keep customer’s impression.

到了壽司拼盤,共有四款,池魚壽司、縞鰺壽司、北海道海膽壽司及灸燒左口魚壽司;由於當中有在下近年最愛的左口魚邊,其他已經給比下去,略微用火槍烤一下,逼出魚油的香味,細嫩的肉質,吃後餘韻仍然在口腔內徘徊,大家試試吧,真的沒騙你;池魚壽司及縞鰺壽司相對下就大路得多,但值得一提的事,壽司飯處理得少見的好,醋香不重,飯粒軟熟,用手指拈起亦不會散開,飯粒在口中卻又感受到粒顆分明,很到位;北海道海膽壽司完全可以滿足海膽愛好者,肥美而澎湃的呈現,入口甘香豐腴,似乎一件有點不夠。

最後跟食友聊天時,暼見水吧位有幾瓶特別的傢伙,原來是店家自釀的水果酒,取來菠蘿酒及桃酒試試,菠蘿酒較濃香,而桃酒就以清幽取勝,兩者都不太甜,下了冰更令酒精度降低,喝慣了啤酒的朋友,可不妨一試。整個菜單不單把縞鰺及池魚以不同角呈現,更令客人能吃到時令的海鮮,的確誠意可嘉。

老實說,我一向不是太喜歡鰹魚,討厭腥味的人都會知道鰹魚的味道很重。

幸好這道前菜以酸溜溜的醋汁及炸蒜粒中和了鰹魚的腥味,連同沙律一起放入口,也很開胃。但礙我對魚腥十分敏感,即使丁點的腥味我也不太喜歡,所以只能一件止步。

這一道,是【縞縿三吃】。

由縞縿不同的部位組成,分別是薄切縞縿刺身、縞縿背刺身和縞縿腩刺身。縞縿肉質緊緻,清甜得來亦帶有魚油的肥美感,當中以魚腩部位最為肥美甘香,愈嚼愈滋味。而薄切更能凸出縞縿的爽口脆身,柚子醬汁亦為縞縿注入夏日的新清。

接著登場的是【池魚三吃】,分別為池魚刺身、薄切池魚伴香蒜麵豉醬、薑蔥池魚細切。

池魚刺身固然不俗,鮮嫩肥美,但因剛剛才吃過縞縿,味道難免會被比下去。幸而有心思搭救,薄切池魚伴著白麵豉醬與蒜粒,而柚子酸汁被製成粒粒啫喱鋪於面上,美觀精緻,味道層次更為豐富。

這個【揚物拼盤】由吉列廣島蠔、穴子天婦羅、炸烏賊魚餅組成。

穴子肉質清甜嫩滑,鳥賊魚餅爽口彈牙,而當中最得我心的一定是吉列廣島蠔,脆薄的外層包裹著新鮮的生蠔,非常juicy。

There were three cuts, thinly sliced, belly cut and back cut.
Personally I felt that the taste of this was lighter than the tuna above, and I liked the thinly sliced one because it was light, and the other two cuts were slighty fattier in texture but when it was complimented with wasabi and soy sauce, it was perfect.
The thinly sliced cut also had delicious grated radish puree on top.

This was fun for the tastebuds too especially the spoon with diced horse mackerel and ginger, the ginger and horse mackerel worked well together.

Deep fried items:
There was oyster cutlet, squidcake and conger eel tempura.
The oyster was the best and the oyster inside was huge and juicy!!!!
The eel was soft as cotton and melts in your mouth with a delicious taste.
As for the squidcake I wish it had stronger squid taste.

最後還有「蜆麵鼓湯」和「芝士蛋糕」。簡單的麵豉湯下了數隻連殼的蜆後,湯中吸收了蜆的鮮味,味道鮮甜,芝士蛋糕水準則不過不失,算是為這頓晚餐帶來一個甜美的結束。

其實這晚除了佳餚外,我還喝了多款美酒。首先是侍應推薦的「巨峰清釀啤酒特飲」。這加入了巨峰提子為材料的特飲,提子味道不是太濃,若隱若現的,啤酒味也不太重,清清涼涼的味道,頗易入口,也能解渴。而到了飯局尾聲,一位食友建議試試這兒的「果味酒」。我雖不嗜酒,還是「欣然同意」
,最終試了「菠蘿酒」與「桃酒」兩款,以這兩款有水果成份,味道偏甜的「果味酒」伴吃「芝士蛋糕」。在這兩款酒中,我較為喜歡的則是「菠蘿酒」。

炸物併盤。吉列廣島蠔,穴子天婦羅和炸烏賊魚餅。廣島蜳的炸漿不算太厚,炸得剛好,裡面的蠔依然juicy。穴子有點薄,所以不太吃得到魚肉,只吃到甜甜的味道。炸烏賊魚餅也不賴,有粒粒墨魚,口感彈牙。這裡始終是主打刺身的地方,所以做到這個水準的炸物已經算不錯。

壽司併盤。除了剛才吃到的池魚和縞參壽司外,還有北海道海膽。北海道海膽鮮甜度爆燈,可以吃得出日本海膽獨有的味道,好吃之餘份量又夠,好滿足呢!另外火炙左口魚邊,油脂豐腴,用火燒過的油份都迫了出來,真的入口即化,但感覺很邪惡呢~

整體食物仍然是千兩的一貫水準,相比起貴價日式料理店,這裡可以用較親民的價錢,吃到日本當造的刺身,實在是食客之福。

四款壽司並排而立,毫無疑問,最吸睛的,必是金黃的北海道海膽壽司
圓形的小飯團上,放了數隻北海道海膽,賣相已經滿分!
雖然此時的海膽並不當造,但吃落卻挺鮮甜的
倆口子也剛剛從大阪的「田尻日曜朝市」回來,真意想不到,這裡的味道竟可與之比較哩!

是晚印象深刻的不只是高質素的食材
還有大廚整晚叫喊,令到現場氣氛更是熾熱
食客一聽到鈴聲,師傅便開始喊出當晚的鮮味推介
在場的食客也踴躍舉手爭其心頭好,真是手快有,手慢無呢!

這個場面令我想起剛剛到訪過一間北海道的壽司店,氣氛也是如此的熱鬧,實在有仿如置身日本的感覺

不過,在炎炎夏日,總會有點不太開胃的感覺。如果你也有這問題,不妨試試這薄切池魚伴香蒜麵豉醬吧。薄切的池魚刺身上放上白麵豉醬、柚子蒜汁啫喱、炸蒜粒,由於柚子蒜汁啫喱和炸蒜粒都是固體的,所以不會和白麵豉醬混為一體。

吃的時候,把池魚片包著所有醬汁一起吃,數款不同味道的醬汁在口中才溶化混合,味蕾在這過程中感受豐富的味道層次,魚的鮮味也同時大大提升了。沒錯,這薄切池魚伴香蒜麵豉醬,就是我最喜歡的!

我一向喜歡日式鹽燒魚,千両的鹽燒池魚帶給我不少驚喜,池魚燒得皮脆肉香,輕輕在魚身戒上數刀,鹽味都滲入魚身之內,鹽香更帶出魚鮮香,喜歡鹽燒魚的朋友相信應該十分滿足。

穴子先以特製醬油先醃先煮,這特製醬油不會太濃郁,味道帶甜,之後再把穴子作天婦羅炸好,由於穴子已事先醃過,所以這款天婦羅是沒有天婦羅汁和蘿蔔蓉的。

穴子和平常吃到的有著絕對不同的感覺,卻又不失穴子的味道,很有驚喜。

既來千両,又是池魚祭,怎能不試試池魚壽司?是日的壽司四貫分別是池魚壽司、縞鰺壽司、炙燒左口魚裙邊壽司和北海道海膽壽司

池魚和縞鰺以厚切做成壽司,鮮味依然。另外兩款壽司炙燒左口魚裙邊經過炙燒,外表變得油潤誘人,令人忍不住整件放進口,感覺是幸福滿瀉!沒有紫菜的北海道海膽壽司是千両的絕活,海膽鮮甜中帶點海水味道,永遠都是這麼高水準!

我一向都喜歡喝麵豉湯,加入了海鮮的麵豉湯更是不能抗拒。今天的蜆麵豉湯,鮮甜度十足,蜆肉飽滿,很不錯。

夏天是吃池魚的好季節,不過炎炎夏日卻不是人人都食慾滿載,千両很用心的調製了多款特色醬汁,除了把池魚和縞鰺的鮮突顯出來,還能把你的食慾都大大增強,這種用心,才是心的料理,也是千両受歡迎的原因!

早些日子,最後一堂課,提早放學。為慶祝完成了這年的課,和女朋友到了千兩吃午餐。我們選了最便宜的"百兩"套餐。由於肚餓,我們叫了客海膽壽司及金目鯛壽司。海膽壽司非常好吃,海膽份量極多,且極新鮮,帶有微微海水味,放進口中,滿口海膽的幸福感覺難以形容。金目鯛則不過不失,有點兒腥。"百兩"套餐亦很快送到面前,套餐非常豐富,有兩件蝦天婦羅、一碗關東煮、一碗湯烏冬及五件壽司,食量不是極大的絕對足夠。雖是套餐,但水準絕對不低。關東煮的湯十分鮮甜,蘿蔔、竹輪十分入味,滲滿湯的精華。蝦天婦羅炸得不錯,炸漿不會太厚,外脆內軟,"唔會成口粉"。湯烏冬正常水準,烏冬煙韌,湯底清甜。壽司絕對與平常吃的無異,非常新鮮。三文魚、赤海蝦都是我喜愛的^^
