朋友的好介紹 ;〕呢個豬油MIX飯,好香,個蒸飯唔落野已經不錯,加埋甜甜地既豉油。份量比較少,所以,一人食兩個OK。腐魚炒年藕苗,D 苗包了一層腐魚香,D苗很脆。魚麵我覺得一般,無咩味,個口感有點鞋鞋地。黑糖蛋糕,好好軟身同不太甜。呢個先係最難整。因為過火,好易太硬同酸。總括,小店坐位不多,但是食物份量不太多,可以每人試一件起兩件止。朋友的介紹真的不錯,很美味。在食野時,見到很多人買外賣,個個都同老闆娘很傾下計,感覺親切。

新漢記的黃酒煮雞一直是我老婆難以忘懷的菜式,今晚來到聯和墟為的就是為了再道品嚐這道味濃酒香的佳餚。菜上桌,先將湯倒入碗中加以細嚐,湯帶點辣而帶酒香,味道濃郁。這湯既暖身又美味,我老婆整整喝了三碗呢!其實這湯既暖身又補氣,很適合女士喝的,當然男士如我亦喜愛這道菜,因為湯內的雞肉很是美味,雞肉滲入了甜醇的黃酒,吃來味道甜美,只是略嫌肉質不夠嫰滑。而我們亦點了石蠔煎蛋,石蠔外型比我所想的大而且很甜美,配上煎蛋再點些魚露來吃真是一流!再加上我們點來的豬油撈飯,這晚真是很滿足呢!

今個復活假過得十分充實,今晚補記上週五與安家的一頓飯。當日在安宅玩到夜晚,兩家人共合4大3小臨急要找晚餐地點,才知粉嶺一帶原來頗多靚靚西餐,但因紅日假期關係,找了兩間都爆悶 (據知平時不多人,從來不用book位的...),結果改去新漢記飯店。新漢記飯店吃的是客家菜,其實甜魔媽媽不太覺得它有客家風味,不過好處是菜式少油,聽安媽講它也強調不加味精或雞粉,令人吃得較安心。首先上檯是薑汁炒芥蘭,成品OK不過不失,如果份量多些會更滿意。這杞子浸木耳節瓜也是健康清新之選,最重要是瓜味不會很強,平日不喜吃瓜的媽媽也吃了不少。蠔仔煎蛋也煎得嫩口而且一點不油,抵讚!! 不過問題是下的鹽也不少,而且落得不甚平均,中間部份突然勁咸,又要扣分。又點了白切雞,份量少得可憐啊,而且味道普通得很。都說給奶奶的鄉村走地雞寵壞了舌頭了。最後是最美味的墨魚餅,真的很喜歡那彈牙口感以及鮮爽滋味,不過成品又是份量孤寒,如果不是當日甜魔一家吃了一場下午茶,3位小客人又各有自帶食物,這樣五個小菜再加四碗白飯連同一支大啤,都不夠4個大人填肚呢。埋單$510,不算便宜,始終少油、無味精有價嘛。無論如何,可以與安爸爸一起吃飯慶生 (當

Deep Fried Pigeon
It is different from the normal dish I used to have in chinese restaurant, normally they cut into 4 pieces before taking to cook. As we were talking to the chef, he explained, deep frying the whole pigeon can help to keep its taste.

Im great bf's aunt is well satisfied with my choice of restaurant as she came all the way from Yuen Long 
. Definitely will come again soon!!!!!!

久聞新漢記大名,也試過幾次過門不入,只因他太紅。幾乎每次到粉嶺都是興之所至,那天那日想吃爵士,又或是群記豬手,轉身就坐小巴,十五分鐘便到。試過踫上爵士又休業,在聯和墟亂走,不經意發現前面有一大堆人塞在一小店門外,一看,才驚覺來了新漢記。就這樣,每次都隨意,每次都跟新漢記擦身而過終於這天好想吃魚麵,好想吃些客家小炒,馬上訂位,更指明要預留炒魚麵。怎料到.....訂了九點,八點半便到了。原來平日新漢記人不算多,八點半,疏疏客客坐了三四桌客人。甫入店,我就報上名字。老闆娘劈頭第一句:「你留了雞,但魚麵沒有。」我真的大叫出來:「為甚麼沒有?」「沒有就沒有。」人生真的充滿遺憾。吃不到魚麵,也要吃飯。難得來到,點幾道特式小菜吧,我相信不會讓我失望。紅蔥爆鮮吊桶最先送上來,紅蔥爆得香噴噴,還沒吃就香得留口水。這裏以原隻新鮮吊桶入饌,連墨膽也沒有去,入口甘香又肉嫰,大火爆炒還能保持嫰滑鮮甜,是工夫。一口一隻,墨汁都留在口中,鮮至極。再來就是我預留的黃酒乾炒雞。甫上桌,我就覺炒功真不錯。雞件都給煎得帶微焦,不用說,又香又好吃。能把這道菜炒得乾爽着實不易,黃酒早給迫入雞肉之中,吃上來酒香不濃,卻與紅棗的香

紅蔥爆鮮吊桶最先送上來,紅蔥爆得香噴噴,還沒吃就香得留口水。這裏以原隻新鮮吊桶入饌,連墨膽也沒有去,入口甘香又肉嫰,大火爆炒還能保持嫰滑鮮甜,是工夫。一口一隻,墨汁都留在口中,鮮至極。

再來就是我預留的黃酒乾炒雞。甫上桌,我就覺炒功真不錯。雞件都給煎得帶微焦,不用說,又香又好吃。能把這道菜炒得乾爽着實不易,黃酒早給迫入雞肉之中,吃上來酒香不濃,卻與紅棗的香甜一直在口腔細細蔓延,回味無窮。

餐牌上看到乾炒豬雜,就點來試試水準。豬雜這東西,不賣錢,又花工夫,只有老式食店才肯做。單是清洗豬肚,豬腸就花上半天,還沒算不同豬雜受火時間不一,看似平凡的炒豬雜,實是大有學問。這道炒豬雜更以豬油渣起鍋,燒得正香時,大火快炒豬雜。豬肝又爽又甜,豬腸軟滑甘香,豬肚豬粉腸也各自精彩。下次我不用到粗菜館,也可吃到炒豬雜了。

早於點菜時就留意餐牌上的豬油撈飯,我又豈會錯過。白飯原砵蒸好,不單賣相精美,更讓米飯受火均勻,粒粒軟糯。我總會猛下豬油再灑醬油,拌好,大口送入口,油香在口中爆發,好吃得連骨頭都酥軟。每次吃豬油撈飯,不用一分鐘,就碗底朝天。
另外來碗胡椒湯米粉。米粉卷卷曲曲,不像吃慣的銀絲米粉。重點當然是胡椒湯底,呷一口,胡椒香溫和而湯底甘甜醇厚,又湯一口,真的好喝,像極用豬桶骨熬製的上湯,對我這種無湯水的人,特別滋味。

吃不到魚麵是一個遺憾。相信大家也知我不會就此罷休,只希望拋磚引玉,有朋友看完這篇文章後 ,會立時拉我再吃一趟,一圓我的吃夢。

出糧了,又是開心慶祝的好晚上。這晚就選了聯和墟的新漢記。點了三道正宗的客家菜:1. 豆泡豆角炆懵仔魚($158) 可能是物價上漲,又不想加價太厲害吧,只將盛器由大大的盤改為中型湯碗,回想四年前第一次吃這個客家人都煮的菜,驚為天人,當年只是$98,現在是「步步高昇」。 厚肉的懵仔魚給油泡過才炆,去了腥味之餘,也提昇魚的鮮味,汁是濃濃的魚湯,非常鮮甜,豆泡的豆味很濃,青豆角非常嫩,是灼過的,應該最後才加入一起稍炆一炆。2.銀蝦魚湯浸菜苗($68) 原本是上海鹹豆漿那種銀白蝦,但這是卻換了不名來歷的蝦,蝦殼非常刺人,難以進食,浪費浪費。3. 蝦醬蒸肉青($78) 不要小覤這道客家菜, 蒸得好,肉新鮮,醬一流。 有濃濃的玫瑰露,蝦醬是是自己調製,又鮮甜又鹹香,肉青爽、嫩、滑。點這道菜配白飯是絕配。

點了三道正宗的客家菜:

1. 豆泡豆角炆懵仔魚($158)
可能是物價上漲,又不想加價太厲害吧,只將盛器由大大的盤改為中型湯碗,回想四年前第一次吃這個客家人都煮的菜,驚為天人,當年只是$98,現在是「步步高昇」。
厚肉的懵仔魚給油泡過才炆,去了腥味之餘,也提昇魚的鮮味,汁是濃濃的魚湯,非常鮮甜,豆泡的豆味很濃,青豆角非常嫩,是灼過的,應該最後才加入一起稍炆一炆。

2.銀蝦魚湯浸菜苗($68)
原本是上海鹹豆漿那種銀白蝦,但這是卻換了不名來歷的蝦,蝦殼非常刺人,難以進食,浪費浪費。

3. 蝦醬蒸肉青($78)
不要小覤這道客家菜, 蒸得好,肉新鮮,醬一流。
有濃濃的玫瑰露,蝦醬是是自己調製,又鮮甜又鹹香,肉青爽、嫩、滑。點這道菜配白飯是絕配。
