周年紀念,今次揀了銅鑼灣的鮨逸!位於市中心,裝修擺設簡約,坐上吧枱,能夠與師傅互動,看到所有食材的製作方法。晚市有兩款唔同價錢既廚師發辦可以選擇,25品也只是$1580,價格合理!先來沖繩縣水雲髮菜,加上蟹肉,水雲口感黏滑,味道酸甜清新,加上絲絲,非常開胃。大嶺三粒米,果香四溢,濃郁旨香,甘酸平衡食物配搭:蝦蟹,刺身,壽司,白身魚,海鮮。鮟鱇魚肝,入口溶化和魚油肝香味濃郁。汁煮黑梅貝,質感爽彈,味道鮮甜。間白魚,魚味比較濃。北海道的粒貝刺身,質地爽實散發着海洋味道。新鮮的北寄貝刺身味道非常鮮甜,口感嫩中帶脆!沖繩小龍蝦刺身,龍蝦非常新鮮,現撈現劏,龍蝦肉清甜彈牙,配上即磨芥辣,味道突顯清新!火灸油坊主魚,迫出魚油,肥美帶魚油香。帆立貝,加了少許柚子皮,清新味蕾,帆立貝鮮甜肉厚。秋刀魚配薑蔥,秋刀魚擁有獨有香味,加了少許薑蔥鮮而不腥。蟹膏蟹肉豆腐配黑魚子,蟹膏豆腐上面放有松葉蟹肉及德國黑魚籽,蟹膏味道濃郁,豆腐相當滑溜,加上矜貴的黑魚籽,味道相當豐富。鰤魚刺身,配柚子胡椒,肉質軟腍,富魚香味。北海道牡丹蝦,配牡丹蝦刺身鮮甜彈牙,上面放有自身蝦膏,而且非常巨型,肉質黏口,非常美味。北海道仙鳳趾即食真豪,真豪非常肥美,加上醋啫哩,入口鮮甜爆汁,口感非常嫩滑!白見貝又稱為白象拔蚌,口感爽嫩,味道鮮甜。黑陸魚,魚脂豐厚,肉質彈牙,淡淡甘甜。庚子壽司配柚子皮 粒粒爆汁!醬油漬過嘅吞拿魚配北海道馬糞海膽,赤身醬油漬質感柔軟,包裹住馬糞海膽,入面仲有蘿蔔苗,赤身完全無筋,海膽亦鮮甜。北海道紫海膽配魚子醬 ,口感非常豐富,鮮甜味十足,海膽入口即化!油爆金雕,魚皮爆得香脆,魚肉卻細嫩多汁,配上高湯及紫菜,非常美味!磯煮鮑魚配蟹膏感非常軟嫩,亦有鮑魚本身的彈牙的質感,味道鮮香。松葉蟹蟹肉配蟹醋啫喱加紫蘇葉 蟹肉非常新鮮,入口鮮嫩,而且量很足,吃起來滿滿蟹肉香味。大吞拿配炸蒜碎 入口即溶,完全沒有根。北海道白海膽 ,口感入口即化,味道非常鮮甜,帶點海水味和海膽本身的鮮香味!龍蝦頭慕蓉湯,用上刺身龍蝦頭和菇慢煮,湯底比較清甜,帶有龍蝦香。龍蝦頭還有很多肉。北海道哈密瓜 加上紅豆雪糕,清新甜入心的結尾。基本上25道菜來自日本不同地方,千多元能夠吃到整個日本最當造最新鮮的食材,師傅每個菜也會講解做法和來源,非常專業! continue reading

同朋友傾開佢鐘意係香港發掘高質嘅omakase,然後介紹我呢間位於銅鑼灣嘅鮨逸!$1580 逸套餐包25品,湯及甜品,內容豐富而且質素很高。先來蟹肉水雲髮菜,冰冰涼涼,酸酸甜甜好開胃。安康魚肝,柚子酸汁,魚香味重,但一啲都唔腥。食日本菜就想飲sake, 請了年青的餐廳經理推介一下, 佢介紹左呢支大嶺三粒米,如白酒般配餐,清甜順滑易入口。然後就是精彩的貝殼類:汁煮黑梅貝, 粒貝刺身,北寄貝刺身。帆立貝,師傅細心𠝹紋,更見彈牙。沖繩小龍蝦刺身,簡單配wasabi , 豉油。鮮甜爽口彈牙,龍蝦頭仲會留低拎去煲湯!油坊主,白身魚,厚彈,油脂比例高達40%,重魚油香而家係秋刀魚嘅季節,很慶幸呢晚可以食到新鮮,香氣獨特嘅秋刀魚刺身。蟹膏蟹肉豆腐,配黑魚籽。鰤魚刺身,配柚子胡椒。北海道牡丹蝦配蝦頭膏,蝦膏超級香好濃。北海道仙凰子真蠔,配土佐醋啫喱,蠔身厚,鮮甜蠔甜。白劍貝,配柚子皮。黑鯥魚, 火炙過魚肉仍然軟淋,油粉充份釋放。筋子壽司,配柚子皮。醬油漬吞拿魚,配北海道馬糞海膽。北海道紫海膽,配魚子醬,用紫菜天婦羅盛載,完全不覺腥,更顯清甜。炸金鯛,熱辣辣,魚皮魚磷好香脆。磯煮鮑魚得嫩,配蟹膏醬甘香。土佐醋啫喱松葉蟹肉蟹膏壽司,炸紫蘇葉好脆。Ottoro 拖羅手捲,魚油澎湃。北海道白海膽,灑上沖繩雪鹽,有餘雪糕般香滑。最後以清甜滿有蛋香的一口玉子布丁為25貫作結。湯物以剛才食完刺身嘅沖繩小龍蝦淆製成小龍蝦舞茸湯,湯頭清甜,蝦頭多肉我也不放過。甜品係日本赤肉蜜瓜配士多啤梨雪糕,以自然嘅甜味完整左呢餐高質晚餐。果然每家廚師發辦都有其特式,今次嚟到鮨逸令我認識到更多日本魚類,貝類,又豐富了眼界和大大滿足味蕾! continue reading
