Toothfish Papillote is toothfish being slowly cooked in a folded pouch, resulting in soft and buttery texture, with Morel mushrooms, black Trumpet, Seaweed Butter, Lardons, pearl onions, roasted chicken jus, it brings out all the flavour.
The braised veal cheek with braising jus is very tender and has a rich savory flavour, it is balanced by the cauliflower puree. The aroma of black truffle on top is strong.
Finally it comes the M4 Wagyu Black Angus Cross Breed Strip Loin with rich Bordelaise sauce, sided with pan seared foie gras, potato gratin, grilled broccolini. The striploin is tender, juicy and at the same time beefy.
