在這稍為離一離題,像AOI葵以雞白湯為主打的店舖越開越多,香港拉麵的歷史似乎又展開了新一頁,遠早的北海道札幌牛油拉麵熱潮,直到九州豚骨湯底無孔不入作香港拉麵的主流,以至沾麵專門店的一時無兩的興起,此刻雞白湯湯底的拉麵或沾麵店開始隨處可見,似乎又是一股熱潮與豚骨湯底要鬥得分庭抗禮。

AOI葵的雞白湯味道雞味濃度適宜,不濃不淡,易入口亦不嗆喉,口感還可以,但以一眾以雞白湯掛帥的拉麵店來說,AOI葵出品的雞白湯的評分是合格有餘,但未見突出吸引。拉麵麵條附有一點兒小麥粒,與雞湯同吃亦配合,麵量較適合女士胃口,男士可能需要點選替玉加麵。半熟蛋大隻亦有相當蛋汁,我覺得很好味。

雞湯附有一小片粟米,觀感不俗,口感普通。柚子醬擱在一旁我感到無奈,這樣擱置的方法優點無錯可令食客先嚐原本雞湯的原味,然後才將柚子醬撥散再嚐新的口感,這原本的打算是好的,但是另一方面來看,感覺就是在樽裡拿出一點醬,就這樣放在麵內便大功告成,似乎沒有精心泡製過,煮法又過於簡單,這未得到我太大的歡心,整碗拉麵口感不平衡,有濃有淡,無意中一啖吞了點柚子醬,那並非清新的口感,而是滿口濃烈生果的酸澀感。

Each bowl of ramen comes with three pieces of cha siu, with two pieces of barbecue chicken, and one piece of barbecue pork. You could opt for all chicken or all pork on the order sheet. I went with the two chicken one pork option, and it was so satisfying!

The chicken char siu was quite thick, yet it’s not chewy. It’s actually quite tender indeed! The sesame on top definitely worked its magic and made the chicken tasted even better!

The pork char siu was comparatively less wowing as it’s quite common. Nevertheless, it’s very delicious.

Ramen was ordinary. The yuzu chicken soup base was outstanding though. It wasn’t oily at all, unlike what you normally find in other Japanese restaurants. The yuzu gave a refreshing fruity flavor to the soup, which made it so much more enjoyable to drink or have with the ramen! Nice! I would recommend you to try out this soup base.

What surprised me most was how Aoi served corn with the ramen. Usually you get individual corn which sinks and gets lost in the soup once you start eating your noodles. Yet, Aoi chopped out whole pieces of corn which remained in the soup (not sure if I am making myself clear but you could see it in the picture), so that you could eat them all without much hassles! Amazing! Such a smart way of cooking! New cooking skill learnt! Well done Aoi!

Not to neglect is the onsen egg, the runny egg yolk was so delicious!

又到放工時候緊係搵間就腳嘅好野食下野喇,係openrice搵左一陣,最終決定去呢間離公司近嘅餐廳,地方雖然唔算太大,但員工就夠晒親切,個人真係好耐無食過日式拉麵湯底湯底餐廳係用左個雞白湯,呢個真係值得喝下,真係用雞去熬出,雞湯唔會太肥,入口夠肉味,連飲晒完都係唔會口渴,真係一個幾令人驚喜。雞叉燒呢度嘅雞叉燒都真係幾有心思,夠份量唔再講,重點係雞叉燒師傅都好細心咁幫我地呢啲食客即日整,唔會入口又唔會好多肥膏餐廳嘅拉麵都真係幾令人興奮,價錢都唔算太貴,幾個朋友食下野傾下偈都算係好地方,下次都要再黎先得。

無疑,這在宣傳照中說使用了富士山萬年水作為成分,並曾得過最高金賞的梳打汽水的柚子果汁成份只有 3%,是不多的,但第一啖喝進口中,柚子味道仍然可以輕易喝得出來,以這柚子味的梳打汽水配以「柚子雞白湯拉麵」吃,雙重的柚子風味,個人覺得,絕對是天作之合,不二之選。

一個人行街,發現這位置新開了間拉麵店。只有白雞湯底,見相片樣子幾清新,於是推門進入這黄色的小門口。由於選擇不多,就選最保守的開始,白雞湯拉麵。雞湯不算濃郁,清淡又講不上,本人不太愛超濃郁又油又杰的那種。咸度差不多,雞內有胡椒味,嫩嫩的比白叉燒好。叉燒有少少淡口也少少”鞋”。比較欣賞的是配上栗米和糖心蛋。兩樣都好食,如粟米再清甜一點更好。麵條選了軟還是覺得不夠,還是一蘭的麵好食,這裡的麵比較無味,掛湯能力比較差。店員最後有細心詢問意見,説之後會換另一麥麵代替。希望小店能用心經營,下次再來吧。

細細一家拉麵屋,門面為明亮的黃,黃色代表熱情;希望。簡簡單單5款雞白湯拉麵已經令人充分感受到。嘗了柚子雞白湯拉麵,一上枱柚子味已經噗鼻,店員細心提醒:要將柚子勻均拌入湯裡! 柚子是新鮮磨製 「特香」 是整碗拉麵的主角,帶出清優香氣 解膩清新。雞白湯比一般清淡,但卻帶出材料的原味,每碗拉麵都配上雞卷+叉燒肉。雞卷只有鹽與黑椒調味;叉燒選用的梅頭部位很爽,表面沒有肥膏 卻很軟淋 味道也是配鹽與黑椒的原味道。麵條硬度適中,幼麵條。拉麵配料配搭看出店長們對拉麵的熱誠而辣味噌拉麵大致一樣,特別在辣味不會太搶 適合較重口味人士享用味玉是流心的,重點是很有蛋香,是選用濃郁的日本蛋製作。

最近聽到不少食友大讚這所新開不久,位處於小街中的拉麵店。身為典型拉麵控的我,當然是要去會一會它了....店的確非常小,基本上只能容納三兩張檯子而已。幸好今天下午沒有太多客,當然亦不用排隊進場,很輕易就能找到了位....這兒差不多只是獨沽一味只賣一款雞白湯底拉麵。心無懸念夠專一,有時也挺好的....今天點的是加了柚子絲的雞白湯底麵,另外再來多客拉麵的親密伴侶煎餃子。這樣的一個自製set,就很完滿了....湯色一睇就知是很典型的雞湯底。呷一口,對我來講是非常清淡絕不會油膩。不過我個人是較為喜歡較霸道,濃厚至起膠甜到飛起的雞白湯。所以這湯事實雖熬得不差的,但就不算是我那杯茶....麵的彈牙度一般沒令人留下深刻印象,反而配菜中加入了開邊的粟米倒是讓我挺欣賞的,再加上柚子絲食起來的確令人的身體少了負擔,蠻清爽的....醬油蛋不算是我食過最流及溏心的,不過也在水準以上....兩款的叉燒,正常的豚肉比起雞的可就差很多,後者用嘴一抿就已化開,很軟嫩。不過對我而言缺點始終是源自太淡的調味,感覺是尤如在吃白烚肉一般....餃子呈薄長形,皮煎得頗香脆不過肉餡未見多汁突出,一般而已....吃畢,店員過來問意見

湯色一睇就知是很典型的雞湯底。呷一口,對我來講是非常清淡絕不會油膩。不過我個人是較為喜歡較霸道,濃厚至起膠甜到飛起的雞白湯。所以這湯事實雖熬得不差的,但就不算是我那杯茶....

麵的彈牙度一般沒令人留下深刻印象,反而配菜中加入了開邊的粟米倒是讓我挺欣賞的,再加上柚子絲食起來的確令人的身體少了負擔,蠻清爽的....

醬油蛋不算是我食過最流及溏心的,不過也在水準以上....

兩款的叉燒,正常的豚肉比起雞的可就差很多,後者用嘴一抿就已化開,很軟嫩。不過對我而言缺點始終是源自太淡的調味,感覺是尤如在吃白烚肉一般....

呢間喺尖沙咀新開嘅拉麵店只係開左個幾月,其實應該仲係探索味道階段中,三位香港後生仔堅持自己理念去打造一碗清爽美味嘅淡麗系拉麵,店家主打雞白湯,咁我當然亦係點左碗雞白湯拉麵,先試湯底,好香雞油味但又唔會好油膩感覺亦唔會太濃,屬清淡中帶出雞油香味,而麵條係幼麵,幾香麥同蛋味,但麵條比較易淋放一陣就已經淋,低溫煮雞叉燒比想象中做得好,微微黑椒香味,肉質好嫩滑,而豚叉燒亦唔錯,大塊之餘仲比一般拉麵用叉燒厚好多,叉燒肉味夠而調味同浸嘅時間都掌握得幾好,夠滑又有咬口,半熟玉子又係水準之作,食完麵同三位老板傾左一陣,原來佢哋以前從未接觸過飲食業,今次係大膽去將自己喜歡嘅味道同理念去煮拉麵,希望可以煮一碗清淡雞白湯拉麵比客人,佢哋話希望可以令客人食到一碗連湯都飲晒嘅拉麵,佢哋會好用心去問每位食完麵嘅客人意見再作參考改良,而佢哋都知道麵條仲有改善空間,希望下次嚟嘅時候可以有所改良,總括碗拉麵係ok嘅,最重要係要支持本地創作,幾位後生老板睇得出佢哋都好有心去做好碗拉麵。

最近食拉麵都是鐘情於雞白湯,因為清新鮮甜的感覺是我喜愛。這晚又讓我找到一間小小的雞白湯拉麵店了。柚子雞白湯 $82白芝麻很清香,特別的是有一堆黃色的類似柚子皮做的蓉,攪一攪勻於湯中就整碗都有淡淡的柚子味,頗清新的,但如果柚子汁可以加多一點,令整碗都有點點的酸味我相信會更開胃清新,因為會點柚子雞白湯的朋友都會吃到酸的。粟米很甜,而且整塊割出來很容易食,雞义燒很滑感覺是慢煮,豬义燒肥瘦適中,因為不是太厚所以吸收了湯白湯的精華,好食!另外友人點了雞白湯 $78這個沒有了柚子清新且澀澀的柚子皮外更加嘗到雞白湯的真正味道,這個湯底會更甜,而且沒有味精的咸味和口乾,真的很不錯!超好喝的信州白葡萄梳打 $25其實一打開樽口已經聞到非常香的白葡萄味,與真的白葡萄味道一樣,喝下去也是非常清甜,爽啊!雞軟骨餃子 $28雞軟骨咬下去爽爽脆脆的,用來做餃子配合得很好,很快被我清光了。還有不同的調味,我自己吃到一半通常就會加辣油,因為會更惹味,立即有不同的味道!這間小店雖然店鋪小小,但感覺頗有熱誠,店員在客人結帳時都會問問意見,代表他們有更想進步的空間,大家經常不妨來支持一下吧!

白芝麻很清香,特別的是有一堆黃色的類似柚子皮做的蓉,攪一攪勻於湯中就整碗都有淡淡的柚子味,頗清新的,但如果柚子汁可以加多一點,令整碗都有點點的酸味我相信會更開胃清新,因為會點柚子雞白湯的朋友都會吃到酸的。

這個沒有了柚子清新且澀澀的柚子皮外更加嘗到雞白湯的真正味道,這個湯底會更甜,而且沒有味精的咸味和口乾,真的很不錯!

今日一早知要出尖咀搵食,所以又做定功課搵左間台灣餐廳,預備試下點知去到,要等位喎...雖然得兩個人眼見依條短短既宜昌街,除左一間台式,重有兩間拉麵當然去望兩眼啦,最後就比雞骨湯吸左入黎開食第一次食又係試基本野,雞白湯拉麵!!外表清秀,先試啖湯,清清地,正喎試埋個麵,每條麵都有大麥粒粒,有口感重有大麥味,同個湯幾夾义燒三塊,有豬肉义燒×1,雞肉义燒×2第一次食雞肉义燒,應該用左兩個唔部位組合加上少少黑椒提味,幾突別豬肉義燒大大塊,不錯配料既栗米可以成排放入口,貼心總括成碗麵每一部份都好滿意,推介提外話,C all 好鐘意食拉麵個個坐正我對面以上食評只反映個人立場,如有雷同,實屬不幸
