在網上見到這間餐廳的介紹,得知這家餐廳的招牌是海膽,被這裏的海膽菜式吸引,加上在網上訂座主餐單七折,今個新年的時候來試一試。很快叫了幾樣網上推薦的海膽菜式試水溫。有一說一,餐廳侍應服務不錯,來到先貼心的問需要的是冷水還是暖水,這天氣溫太冷,當然是要暖水啦!看到其酒牌,應該是期望客人點清酒的,可惜我不能喝酒。喝暖水雖然好,但後來配合海膽的時候總會有股腥味,若果能提供熱茶的話會更好。前菜竹炭麵包海膽醬 $38Bamboo Charcoal bread with sea urchin sauce 這裏的前菜需要另外加錢,不過看了網上介紹是竹炭麵包配海膽醬, $38這個價錢也算合理。很快竹炭麵包送上了,擺盤構思得不錯,大碟上放上四片小小的方形竹炭麵包,另外一個醬油碟中放着由新鮮海膽及海膽醬造成的自家製海膽醬,另外還有一隻小碟放着匙羹,儀式感十足。竹炭麵包的味道像方包,但有少許甜味,烤過但時間不長,溫度是溫溫的,外層有少許脆口,內裏仍然是柔軟的,但味道仍然是普通方包。敗筆之處應該算是這個海膽醬吧,海膽醬的味道非常淡,若果單吃的話細細品味也能夠吃到海膽的味道,可惜配上麵包以後所有鮮味都基本被麵包味

竹炭麵包海膽醬 $38

這裏的前菜需要另外加錢,不過看了網上介紹是竹炭麵包配海膽醬, $38這個價錢也算合理。
很快竹炭麵包送上了,擺盤構思得不錯,大碟上放上四片小小的方形竹炭麵包,另外一個醬油碟中放着由新鮮海膽及海膽醬造成的自家製海膽醬,另外還有一隻小碟放着匙羹,儀式感十足。

在我剛剛吃了一口竹炭麵包的時候,這個手卷已經上枱了,感覺上速度很快。
由於知道手卷不能放太久,我馬上放棄吃竹炭麵包,改為先吃這個海膽手卷。

一拿上手就覺得紫菜太薄,中間接觸米飯的部份已經完全吸滿了濕氣,變得很軟,只有頭尾兩部份仍然能夠保持脆身。
一口吃下,海膽味道並不突出,可能是選用的海膽質素未夠高級,也有可能是帆立貝的肉質比較大,掩蓋了海膽的鮮甜味,由於這個手卷尺寸不算太大,我是一大口吃下的,無論海膽的鮮味及帆立貝的甜味都未能在我的味蕾上留下記憶,只留下了紫菜濕軟 ,掩蓋了海膽鮮味的印象。

我環顧這間餐廳,大部份的位置及客人都是和我一樣,坐在獨立的枱,而不是在吧枱上,這樣的話仍然推出這個非常快就會濕軟的手卷是否合適呢?或者可以在紫菜上下功夫,或者要想辦法改良菜式,但這就交給師傅考慮吧!

海膽茶碗蒸 $108

現在天氣太冷,前面兩個菜式只能夠算是溫的,溫度不夠,都看到這碗熱騰騰的茶碗蒸上枱是還是很期待的,因為太想吃熱的東西。
這個茶碗蒸的確是剛剛蒸好的,熱氣騰騰,看着賣相十分吸引,表面充滿着海膽的金黃色,然後還有海膽及三文魚籽。
這個茶碗蒸溫熱好吃,非常細滑,但海膽仍然有少許臭味,我覺得這一板海膽的味道都一樣,都有這少許臭味,可能是我運氣不好, 正好吃到味道不好的海膽吧!加上把海膽放在熱的食物上,更加突出了這少許的臭味,三文魚籽也只是獨立存在,有一部份三文魚子甚至已經干扁了,看出不太新鮮,和整個菜式的融合也並不充分。
要讚的是在表面淋上的海膽醬增添了茶碗蒸creamy的口感,整體來說這個茶碗蒸味道不錯,調味適中,但上面裝飾的海膽肉及三文魚籽反而拉低了這個菜式的分數。

其實在這個菜式和意粉中我猶豫了一段時間,最後選擇了這個菜式,還好是我最喜歡的一道,也是我覺得最好吃的一道。

這個菜式的成功完全歸功於蟹味增,蟹味增非常鮮甜,雖然海膽及三文魚子仍然是一樣的貨色,有着一樣的缺點,但由於蟹味增的味道太突出,可以完全地掩蓋着以上兩者的缺點。
配合的小麵包也有心思,和小麵包配合着吃的時候可以中和了蟹味增的鹹味。
吃了兩片,正當我想着美中不足是小麵包的份量太少,剩下的蟹味增還有很多,猶豫着是否需要問侍應再加量時,眼角掃上了吃了一半的竹炭麵包及海膽醬,我靈機一觸把剩下的海膽醬全部倒入甲羅燒中,拌勻以後海膽醬增添了蟹味增的creamy感覺,使其口感沒有那麼乾,竹炭麵包也和蟹味增配合的很好,終於不用吃沒有什麼味道的麵包了,不禁誇贊自己聰明,終於可以好好地享受這個竹炭麵包了。

總括而言這裏環境不錯,坐得舒服,服務也好,但食物相對普通,主要是靠材料的功勞,若果海膽的質素今天普通的話就會拉低食物質素,我覺得好吃的蟹味增也是可以現成買的,看不出廚師的功力,我有這些食材的話自己在家也能堆砌得出。其他的例如海膽醬及茶碗蒸也只屬於普通,吃完沒有什麼記憶。七折以後買單也差不多$500 一位,若果沒有七折的話要六百多元…只能說一切都平淡如水吧

朋友今個月生日,我同佢都勁鍾意食海膽,咁啱係OpenRice 見到呢間以海膽為主題嘅餐廳,緊係吾可以錯過啦!竹炭麵包配海膽汁係送嘅前菜,幾特別。之後叫咗個磯主花螺,甜甜地做前菜都幾開胃!海膽魚子醬帶子意粉係必叫,打卡一流,海膽新鮮,意粉醬都撈得好味!不過我覺得最特別係個唐揚免治雞肉海膽流心蛋,熱辣辣嘅流心蛋配合埋雞肉同新鮮嘅海膽真係好吾錯!之後又嗌咗海膽手卷,見到有咁多海膽心情就特別好!但係由於呢間嘢啲嘢實在太細份,食極都吾飽,所以又叫多左其他餸。個蘋果豚肉卷香香地又林幾好味,另外仲嗌咗燒魷魚,炒枝豆,燒明太子伴青瓜。個燒明太子就真係太鹹唔好食,建議唔好叫!整體嚟講呢間嘢真係偏貴,啲嘢太細份,不過用嚟打卡都開心嘅,呢一餐兩個人食左1千蚊,但其實吾算好飽。

前面已經食到半飽,先至到主菜部份🤪所有魚生都好鮮甜,海膽唔使多講,好甘香😚;鮑魚甜甜地幾彈牙;油甘魚呢款比較有咬口;吞拿魚好厚身帶點油脂香;帶子似乎係我食過嘅帶子刺身入面最厚👏🏻👏🏻帶子本身鮮甜味爆發;火炙左口魚雖未至於入口即溶但油香豐富😽

特別之雪糕點可以不點~用海膽做成之雪糕,棒,驚喜,味道不怪,甜甜的不會出現腥味,夾餅是用日本米做,朋友也說好棒,像吃三文治一樣,咁鮮,口感富有。

店子之非酒精類飲品也很好,居酒屋食午餐~環境優雅,座位也很寬,朋友坐得舒服又快樂。晚上再來會更有感覺。戶外座位又有打卡位,感覺chill!
